Hi, I'm Italian I can tell you for the young generation that wan't to continue to make quality italian...food or anything else...isn't easy, the government doesn't help really and ask for quite lot of taxes...the farmer's can earn if they do top quality stuff and sale it abroad or turistic places, if not many times isn't worth all the job they do So I do understand the people who decide to go abroad, I was out of Italy for 6 years, I had lots of chance, I did not here, however this is my point of view
