How to Make GANG NOR MAI | ແກງໜໍ່ໄມ້ | LAO BAMBOO SOUP

- I'll teach you how to make Gang Nor Mai. This earthy Lao stew is made best with fresh bamboo and yanang extract, proteins, and a variety of mushrooms. The yanang extract is the soup base and is very important. The leaves can be found in the frozen section of most Asian and International markets. There is also a canned version that is less hassle. I love to dip sticky rice in this dish. When I make Gang Nor Mai, my husband loves that our house smells like his mom's, and I love that too. It smells like home. Please boil the bamboo for at least 30 mins to remove any toxins. This will prevent stomach upset and will prevent the bamboo from spoiling the dish prematurely. If you like a more salty stew, just add fish sauce to your bowl.
Ingredients:
Thickener Paste:
1/2 Cup Sticky Rice
1 Cup Water
3 Thai Peppers
1 Shallot
1 Stalk Lemongrass
Soup:
1 Large Bamboo Tip
24oz Bamboo Shoots
10 Cups Yanang Extract
5 Kaffir Leaves
1 Inch Galangal
1 lb Small Pork Ribs
1 Pack Woodear Mushroom
2 Pack Oyster Mushroom
1 Pack Enoki Mushroom
2 Pack Beech Mushroom
1/2 Kabocha Squash
4 Thai Pepper
1/2 Cup Padaek
1/2 lb Rice Patty Herb
1 Can Quail Eggs
1 Tablespoon Chicken Bouillon Powder
1 Tablespoon Sugar
2 Teaspoon Salt

Sadly I do not know any traditional recipes. My ancestors were Irish and when they migrated to the States, the Irish were discriminated against and refused work and accomodations. Many Irish lost their culture and food in an attempt to blend in. My family has not passed down recipes the same way my Lao husband's family has. Very sad, indeed.
