Pork knuckle 1.2 kg.
Carefully remove the bone.
Make incisions.
Cover with plastic wrap.
Pour the marinade over the meat.
1 teaspoon salt.
1/2 teaspoon black pepper.
7 garlic cloves.
70 ml soy sauce.
Mix well.
Brush the surface with the prepared marinade.
2 teaspoons French mustard.
Brush well.
100 g pickled capers.
Roll up the knuckle.
Tie with kitchen twine.
Place in an ovenproof dish and bake in the oven at 160°C for 2.5 hours.
