Oh man, I recently discovered this bakery and its bread via YT. I had never heard of bread made solely of semolina. Awesome to see another story about them and Altamura. One day I will visit.

I strongly suggest you Visit this bakery. It’s very easy to travel around. Take the train from Central Bari train station. To ALTAMURA station then it’s a 15 min walk to where Vito was in the little fiat. Then walk around the corner 2-3 mins and the bakery is there. Very very easy to travel that area. Go and enjoy. First time for me in Italy. You will love Altamura and Matera. Giuseppe the owner is exactly like that. He gives you a tour Then gives u bread and pizza to take away. For free. I have all my photos of us together in that bakery. PRICELESS
WOW!!! Incredible! Amazing! Great Share! My Dad still has one of those rolling stones for grinding, like the ones in the museum. But ours has 3 legs underneath it. Sometimes they get whittled away over time. The other one is slightly shorter on one side and it has one smaller leg. The grinder is supposed to be tilted slightly away from you. My family is part Hispanic/Native American and my grandmother would grind corn for corn tortilla flour on it, as well as grind and crush up freshly roasted chilis for making the mole (moe-le) dish. It would turn it all into a chili paste that was bitter. You have to mix it with chocolate or peanut butter depending on which region you come from. But that stone grinder was used since ancient Rome/Greece. When you think of the stretch of the Latin languages it reaches everywhere, like the Latinos too. Great share. I would love to go to Italy someday. I am always in search of learning how to perfect my breadmaking skills.

Yeas comes from every where, if you live dough in the open it attracts yeast. They could have covered the statue with a bit of leather.
