It's best to use coverture chocolate, but I had used compound too, got good result.. But those sprayed on the cake board is smudging if I touch it, if the chocolate is compound...
Hi, cany colour and gel colour are different. candy colour means colours specifically for chocolates.. Gel colours are water based colours so we can't use those colours with chocolate..

Thanks for your comment. 45 degree is ideal to get the desired effect, too hot or cold will not give the proper results. Not all spray gun works, there should be pressure control knob to control the speed. If the cream is cold enough, you can spray on them.

You can use any medium but the key thing is to cool it well before spraying. In this video, I have used buttercream. To get this effect you need to use high pressure sprayer.
We can use it with whipping cream, but it's difficult to place any decoration on that as the velvet spray will form a thin coating outside soft whipping cream.. A gentle pressure while attaching fondant accent will make it crack.. Otherwise no issues..
No.. cocoa butter has itts own properties which enables it to harden and stay even at room temperature the same .. while butter will have its aftertaste and other properties are very different

Here I covered with Buttercream and it must be in freezer for minimum 2 hours before applying the velvet spay.

Yes, you can add an extra coat to cover up the crack.
