Qualified data protection officer here! It is indeed illegal for them to not tell you they are filming on their bodyworn cameras. It comes under your right to be informed, a new right we all got when GDPR came in back in 2018. The rule says they must inform you, no later than the point at which data is captured, that recording is taking place, the purpose, and how you can get a copy (according to GDPR). Their code of ethics just says they must inform you. If they don’t tell you and still film, then they have not upheld your right to be informed, and you have a right to compensation under Article 82. Look it up - it’s v useful!
It is fairly obvious which of them loves doing the donut run, you also need to actively listen to their language, they will incriminate you if they can. challenge their use of language every time.
