    Baking supplies: Spring form pan - 9x3 inches, stand mixer or hand mixer
    Filling: Philadelphia cream cheese. I find it has the best flavor and texture.
    Topping: For this recipe demonstration I used canned, cherry pie filling. Fruit pie fillings, fruit sauce, as well as preserves, jams and jellies, make easy toppings. Fresh fruit like strawberries, blueberries, blackberries or a mix of berries, are simple toppings and create a wonderful contrast of flavor and texture with the smooth, creamy filling. Or, go for a classic, plain cheesecake with no topping. My favorite!

      Ladylovesskyy I’ve made it with the cherries at least 10 times. I’ve made it with salted caramel (substitute the citrus zest with vanilla bean) 4 or 5 times. Making it again today for thanksgiving. It’s a real hit!

    Made this cheesecake for Thanksgiving 2016 and not a single slice was left!!!! There was a slight argument over the last slice to be totally honest. I'm definitely making three for Christmas this year.

    I just wanted to say that this is my third time making this cheesecake, and, guys, IT DOES NOT DISAPPOINT. That is, if you follow every single direction to the T. xD Think you're cutting down the hours you have to wait by not leaving it out so long and not leaving it in the fridge so long? Ha, you're in for a surprise! You've just sentenced your cheesecake to a liquidy death. xD It's very important that you follow each of her directions. (Trust me, I know!) Anyway, this cheesecake is great and I've been using it for probably a year or more. If you want to add some homemade whip cream to it, this is how you'd make it:
    *INGREDIENTS:*
    /- 1 quart of Whipping Cream
    - 2 cups of powdered AND SIFTED sugar (don't want any lumps in there!)
    - 1/4 tsp cream of tartar
    - imitation vanilla extract (you can use regular vanilla, but it might make your whip cream look less white!)/
    *DIRECTIONS:*
    /1. Pour your whipping cream into a large bowl (you're going to need some space!). On high, use your mixer for five or more minutes to incorporate air and fluff into the whipping cream. Before you stop, you should see some tracks being left by the mixer (meaning the cream's not just returning to its liquid form; it's actually looking a little more solid!).
    2. Slowly pour in your powdered sugar while mixing the cream on low (don't want the sugar spitting back at you!). Repeat for cream of tartar. (The cream of tartar is going to make it stiff enough to pipe!)
    3. Add 1/4 tsp of vanilla for starters. Mix the cream on high. Taste if it is vanilla-y enough. If not, repeat step 3 until it is. (I usually just pour some in without measuring. If you've developed this skill, then by all means, use it!)
    4. Refrigerate for a few hours if you want to give it a little more time to set up. Don't have a few hours? You can use it as soon as you're done making it, too!
    5. Enjoy!/
    This recipe is a compilation of recipes I've searched for before, flaws I looked up on Google to fix, and adjustments according to my own taste buds. I hope you find it to be useful!
    ***I've found that this recipe can last for a few days if refrigerated. Soon, however, it'll start to develop a white/clearish liquid due to the dairy (kind of like sour cream has when you first open it!). So SAVE WITH CAUTION.

    I rarely if ever comment on youtube videos, but I have to say this method and recipe makes the absolute BEST cheesecake I have ever made or tasted. My whole family was flipping out last night, no lie. I've made dozens of cheesecakes. There wasn't a crack, blemish or even line on the top of the cheesecake. Unreal. And the cake is delicious, but not over the top rich like some cheesecakes are. Bravo!!!!

    I have watched several cheese cake recipe video's
    today. This is most like what i made when a new bride. I pick up tips from each video. The wet knife is a great tip. Putting the pan on a can before poping the spring form pan is also a great idea

    I love to bake and have made many desserts but this recipe is truly the most delicious thing I've made in my entire life. The orange zest and lemon zest take it to another level. It truly tastes like a professional cake! It's easy to make but needs alot of time and careful handling during baking. However the tips and detailed instructions were so incredibly helpful to ensure a PERFECT delicious cake. I added a strawberry coulee topping and used a water bath to ensure no cracks. Everyone was so impressed and I wish I had made two!! Thanks so much for sharing this recipe Di!

    I made this delicious dessert a day before thanksgiving and it was refrigerated over night. When I took it out of the oven it was not lightly browned which I think was the reason why the center was basically not set at all.. The taste was delicious the sides where really creamy but the center was just not cooked! Oh and the crust! My goodness, everyone was talking about how good the crust was!!.. I will be making it again just I will try to leave the cheesecake in the oven until it browns a bit. Thank you so much for this absolutely wonderful recipe, it was delicious and easy to follow!

      rosa fermin Most of the browning happens in the beginning of baking, when the oven is the hottest. Be sure to have the oven preheated for at least 20 minutes before you put the cheesecake in and get an oven thermometer to check the temperature and adjust the temp before cooking, if necessary. Ovens can run slightly hotter or cooler than the temp you set. Good luck and thanks for watching! Di ;)

      When you say "Pre heated" do you mean let the oven reach that temp first....then wait 20 minutes before placement?

    hi there, it looks very nice, i have a question though, i have watched other recipes where people add that sour cream mixture at the end & some of them add sour cream mixture right in the batter, like you demonstrated it here, so is it necessary to add the sour cream mixture after all?

      +Hayuhi New York style means that you have added the sour cream. I think the original recipe calls for adding the sour cream on baked, chilled cheesecake. But its up to you

      +Hayuhi I strongly recommend you do it the way Diane made it. I just made this today for the first time and it is perfect. Cheesecake is my favorite desert so I am so happy that Diane helped me pull off such a yummy cheesecake.

    I used your recipe and my family loved it. I followed every step to the T and my cheese cake came out very good. It still cracked on me though. Can you tell me what I can do next time to prevent that from happening because this is gonna be the only cheese cake recipe I use. Thank you so much for sharing this recipe.

      Connie Walker You can try placing a pan filled with about 1-2 inch of water on the rack beneath the cheesecake to give off some steam while it bakes or you could use a water bath.     I just made this yesterday and im eating rn as breakfast as I type. It is sooo good!!! I did everything as the recipe said. The crust was giving me a hard time and not compacting good. I just worked with it and kept going. My cheesecake has no cracks!! It didn’t brown as much as Diane’s. I’m at high altitude too and I think the center is not as firm as the rest of it. I think next time I’m going to give it 5 more min at 400 f. I also made a berry coulis and it’s delicious!! Thank u so much for this recipe! I highly recommend to anyone who wants to try! This was my first time making a cheesecake!!

    hey ,i have tried many times to make my own cheese cake at home ,but never get it to look n taste like one at the supermarket. it always shrinks and falls back and comes out thick and tight like pudding.How can i get my cheese cake to be soft ,form and creamy ?

      I'm not sure what happened with the other recipes, but there are various reasons why cheesecakes sink. If you make this cheesecake, just follow my recipe and be sure all of your ingredients are at room temperature, the pan is at least 3 inches high and greased well and mix on low speed. Cracks do happen, but this cheesecake has great flavor and a wonderful texture. Good luck! Di ;)

      Jay S It's called 'filling' not fill in. You can get a cherry pie filling in a can at your supermarket.

    I absolutely loved this dish. I made it for my daughter's birthday. It was a hit. Everyone loved it. I did it exactly as you showed and it was creamy and rich. Next time I will probably put a little less lemon zest I put in one teapot but it still tasted fasts stick and was very pretty

      I know, right? even tho it was a bit pricey I pitted and cooked down cherries with a bit of sugar,lemon juice.wonderful. or do the same with less expensive fresh fruit

    I made the cheesecake following your recipe with minor change (didnt add zest and didnt do the oven techniques about keeping it open and waiting ) and it came out perfect! Easy and great recipe!!

    Hey Di, I baked the cheesecake for Thanksgiving and it came out wonderful, flavorful and with no cracks! First time I make cheese cake, I did it with my favorite assistant, my 11-year-old daughter. We all loved it, we cannot wait to make cheesecake again!

    Just took it out of the oven. Came out beautiful. It has one crack but I think it was still a good first try for me considering it's my first cheesecake and I used a hand mixer. I have some cherry pie filling to cover it up. Thank you for the recipe...it smells so yummy I don't want to wait the 8hours to cut in!
