    Although I know how to make this recipe, I keep coming back to youtube to really whet my appetite before making it! And here we go, one of my favourite chefs online who has enacted this recipe with much vigour! I don't know about the sharpness of lime vs lemon, but I can tell you that one of your body parts is gonna be 'sharply exploding' with the amount of green and red chillies that this master chef crunches into! I wonder what will be the recipe to calm things down later on!? Or may be he has a body of steel .. coming from Andhra! Nice one Sir.

    I really don't think it's a good idea to add the lemon juice to hot oil. That just denatures the citric acid content and imparts bitterness. The traditional, and ideal way to do it would be to add the rice first, let it cool and then add the lemon juice. Et voila, perfect lemon rice.

    • @HardJob1000
      @HardJob1000 11 ปีที่แล้ว +9

      Of course the lemon juice boiled, there was a thermal shock when it was added. Lemon juice should always be added at the end.

    • @HardJob1000
      @HardJob1000 11 ปีที่แล้ว

      Thermal shock is applicable here, just like science is applicable in cooking and pastry. Don't be so arrogant in putting people down with your googled knowledge. Goodbye.

      adamp108 ***** Courtesy of Wikipedia, in which I learned that not only does a Maillard reaction occur at much higher temperatures than caramelization, but that adamp108 was wrong: "Caramelization is an entirely different process from Maillard browning, though the results of the two processes are sometimes similar to the naked eye (and tastebuds). Caramelization may sometimes cause browning in the same foods in which the Maillard reaction occurs, but the two processes are distinct. They both are promoted by heating, but the Maillard reaction involves amino acids, as discussed above, whereas caramelization is simply the pyrolysis of certain sugars.
      The following things are a result of the Maillard browning reaction:
      Caramel made from milk and sugar, especially in candies: Milk is high in protein (amino acids), and browning of food involving this complex ingredient would most likely include Maillard reactions."
