I always use a baby food jar of pumpkin. Here in germany it is one of the safest foods, it is 98% pumkin and 2% water and it is already puree and just enough for 500ml sirup ;)

I accidentally made a pumpkin spice liqueur. I made a baking spice tincture and tried to make a pumpkin (butternut squash) extract, but it tasted weird on its own, so I combined them. It took a frustrating amount of math to get it to ~25% abv and ~20% sugar.
So I've found out that you can just add a pinch of pumpkin spice to the ground coffee just before using the needles to de-clump the puck (the needles help mix it in). It's really useful to help dial in how much spice you want VS how much sweetness. If you just want a seasonal shot of espresso with no sugar then that's possible! 😅
So…without the inclusion of actual pumpkin (which is my preference)…a pumpkin spice latte is basically masala coffee instead of masala chai?? Because I swear those are the exact spices I use to make chai at home 😂

Interesting thought. The sugar would probably make it freeze oddly, but not poorly. Kind of more granita/sorbet-esque? More shaved ice like than solid cubes. Worth a shot!

I've personally hate cardamon in pumpkin and find that's the "soapy" flavor. I opt for cinnamon, nutmeg, cloves, and ginger. Cardamon is a powerful spice flavor

Okay it sounds like a coffee version of a Glühwein somehow. So 😂 I'm out. I got that this is kinda christmasy...but since this isn't a thing in my country...I never had one. And I can't imagine drinking that. I rather go with hot chocolate and gingerbread.
I learned the other day that canned pumpkin (at least in the US) is actually allowed by the FDA to contain gourds other than pumpkin. That isn't to say it isn't totally fine to use canned. Do what fits your budget and lifestyle. For those who want real pumpkin, your best bet is to do your research on the ingredients in your canned of choice, or puree a pumpkin yourself.
And don’t forget that most pumpkins for sale aren’t for eating cuz they’ve been genetically modified to make sure you go straight to a farm that grows your pumpkins. Also maybe check what’s in the soil as that adds to what’s in your pumpkin… like how you shouldn’t eat rice from places that have had heavy lead or bombs cuz then your rice is actually just poison. After seeing so many excited Americans talking about it, I tried a PSL and did not enjoy it at all - I don’t know if it’s because in my country pumpkin is only used in savory cooking, but I felt like I was drinking coffee that I’d accidentally dropped my dinner into. Really did not vibe with it.

While they don’t use pumpkin in it, Holy Kakow makes an incredible pumpkin spice syrup. Used it for years in cafes.
