  •  After building my File Cabinet Smoker I was researching different ways to create smoke Inside the smoker. I designed it to use charcoal, wood, Electric andPropane. I can also use it to either hot or cold smoke meats and cheeses. I bought the pellet tube and the smoke generator and the chips and pellets to operate them.     Dry out the sawdust in the microwave. I have been using the ProQ smoke generator since they came on the market. My smoker is a 1'×1'×6' works locker. It has never failed me.

      I used the apple chips sawdust and did smoke some cheese with it a second time and it did work OK. I open the air vents a little bit more and made sure I did not pack it too tight before I brushed off the top. I got the sawdust chips from Amazon. I never thought about them still being a little wet or not all the way dry it out. Thank you.

    You're right.. the sawdust smoker is a bit harder to master but when you do it's working well. I also have both of these and they both have up and down sides.. Meanwhile the sawdust is harder to learn on how to use it properly, the pallet smoker tube rises the temperature significantly highier inside smoker then sawdust maze one.. And im talking possible 20+ degrees celsius. Therefore my personal preference is tube with pallets for hot smoking and maze sawdust for cold in my electric smoker unit. Cheers.

      Thanks for the comment. It doesn’t take a whole long time to cold smoke cheese. I generally do not cold smoke any cheese until the winter months because it would melt in the smoker. I also set my smoker in the shade when cold smoking. I have got the smoke generator, the maze generator to smoke for a couple of hours before it quits and generally that’s about what it takes to smoke cheese because you don’t want it too harsh. If you look back. on my channel you can see where I have built a smoker out of a file cabinet. Then I did an update on it. The firebox is at the bottom and the top three drawers are the smoking chamber. I have a thermometer on each one of those, and there is a temperature difference between each one of those while smoking weather, hot or cold. there is a bit of a science to it unless you have a Traeger or green mountain or something like that lol I am not one to just quit but I have found that the smoke tube has worked flawlessly every time but the smoke generator.     I thought of buying exactly both of those products. And decided on that snake (generator thingy). Thanks for your video. I'll go and get a couple of tubes instead and throw the snake over the fence.

      I wouldn’t throw the smoke generator over the fence just yet. The great thing about a smoke generator is they don’t produce a lot of heat and they’re great for smoking cheese if you like smoked cheese. You only have to smoke cheese for a couple of hours not all day. And it will work great for this application. She is this something that you smoke when it’s cooler outside, night time or in the shade because it can melt very easily. So you would not want the heat intensity from the pellet tubes. Good talking with you and enjoy your endeavors with your smoker.

      You’re welcome. What I really like about the pellet tube is it will do everything that the smoke generator will do only it does it better. It’s less expensive to buy and pellets are less expensive than the chips.

      There is at least one other product out there, by A-maze-n. It is similar to the smoke generator but uses pellets. Plenty of TH-cam videos out there.

    Hey Joe, thanks for taking the time to make this, I have the tube and have been using it as a cold smoker for Buckboard Bacon and other things in my pellet smoke, pellet smoker off. I've been getting anywhere from six to seven hours from it, if I need more smoke time I add a short tube when the long one is close to burning out, all done using pellets. Coarse I'm not at altitude here in frosty communist Minnesota, but those are my results. Really like your filing cabinet smoker idea, was going to build one and then I came across a guy selling a tall bread proofing chamber for cheap, I'll see if I can put up a vid and let you know how it goes. We're in this together brother !

      Well, thank you for checking out the video. I use my pellet tube for cold smoking also. It’s not finicky like the smoke generator is. In cold smoking especially with cheese you’re not trying to heat anything you’re just trying to smoke it. So I will set the tube in the bottom of the file cabinet smoker and put the cheese in the top. I also smoke the cheese during the colder months or at night on a cool evening because there’s nothing worse than melted cheese in your smoker. Lol. And on a sidenote, I have an off grid cabin on 26 acres in the central upper Peninsula of Michigan. I have been through northern Minnesota a few times.

    I just used a pellet tube to smoke some chicken wings, covered them with Buffalo sauce & they were awesome!

      I used it in my Propane barbecue grill two nights ago. I smoked a sirloin tip roast for about almost 4 hours at about 230° until the internal temperature was about 145°. I use the blend of Cajun seasoning that I make myself and it made great roast beef sandwiches. I was using indirect heat. They work great.

    I have the tube smoker. One of the ways that makes it convenient to use is when I am using a Weber kettle grill. If I am grilling indirect, I will place the tube smoker right over the coals. Lots of smoke.

      I do like the pellet tube smoker. I also use it in my BBQ grill with indirect heat. I have done a couple of sirloin tip roast recently to make sandwich meat out of for a trip that I just went on. They work great.

    Thanks for the video as I've just recently started cold smoking Sockeye Salmon in my WSM. Here's some info that might be helpful. My first cold smoke using Cameron alder sawdust produced a beautiful piece of perfectly smoked fish. I ordered some more Cameron alder sawdust, this time in a bigger bag and the fire kept going out. After a week of going crazy, I compared the two batches and the second one was almost twice as course as the first one that kept burning. I ran the coarse batch through an herb grinder until it was about the same "extra fine" consistency, lit it yesterday to smoke some cheese and it burned and smoked all the way to the end. I also made sure I lit the maze with my propane torch starting from the bottom of the beginning ramp where the candle would go. If you don't get the fire underneath the dust, it might not continue, just like building any fire.
    The tube is a lot easier but I tried that with wood chips and they would sometimes catch fire making the salmon closer to hot smoked flakey rather than the silky texture we associate with a cold smoked salmon. Maybe this might help anyone trying to get a cold smoke using the maze. In my case, it was all about the sawdust. Cheers!

      This is the perfect time of year to cold smoke cheese. It’s not too hot out to melt the cheese. With some of the comments that I have gotten over the past few months, I’m going to have to give that cold smoke generator another try. I did get some cheese smoked last time. I tried it, but it did go out a couple three times. The sawdust I ordered I got off of Amazon and it was dry. I did not know there were different sizes of the sawdust for the smoke generator. I think I will try one of the local stores and give it another go. Thank you for the comment.

      In my smoke generator, a candle would not fit under it like it was supposed to which was no big deal to me because I use a little propane torch to light it. Also off the bottom. It may have something to do with the different size in the sawdust chips like you were saying.

      @@safarijoesadventures That's what I couldn't figure out, the sawdust is labeled the same and it made no sense until I thought to compare visually. I took a picture with my phone but not sure if there's a way to show it here but one can see a difference. My wife confirmed this, but she likes me so maybe she's biased or just wanted me to stop obsessing, but she does love the salmon. Happy smoke trails!

    You're not supposed to pack the sawdust down, that's why it's going out.
    It works fine it you use it properly, and every tea-candle I've ever bought fits.

      When I bought the smoke generator it did not come with instructions. I watched a couple of TH-cam videos and both of them showed the guys filling it and then kind of packing it down under the rim so the burning did not jump the rim. That’s the only instructions I seen. It does make sense thinking about it to put it in and then maybe shake the dust out of it to below the rim. It would give more room for oxygen. Thank you Peter I will give it another shot because I like the idea of using this for smoking cheese because it’s not so hot. As for the tea candles this is the only kind I found I did not see any smaller ones. And I am OK with using my little propane torch to light it. Thanks for the comment. This is how we learn.

      @@safarijoesadventures Also, there are two versions of this smoke generator - the small one that you have, for containers of 30 - 150 litres, and a larger one for containers of 150 - 500 litres.
      Your filing cabinet will be about 330 litres, so I recommend either using just one of the drawers & blocking the others off, or getting the larger 'Artisan' version

      ​@@safarijoesadventuresJust use a workbench brush and lightly brush across the top of the smoke generator. It should brush off excess sawdust to just below the wire rim.

      @Divelucaya I will give that a try next time I use it. I really like the idea that it does not generate much heat and I have used it for smoking cheese mostly but just kept having problems with it staying lit. So yes, I will give it a try, thank you.

    I've had a similar spiral smoker, tried both dried sawdust and dust from my sander. Neither worked. Totally useless. Smoked for less than 5 minutes.

      I have fiddled around with the dry sawdust chips that was recommended for the smoke generator and at best just a few minutes to an hour before it went out. When I am smoking some thing, I don’t like to have to keep fiddling with it. That is why I recommend the pellet tube over the generator. Nothing should have to be that fidgety to get it to work. The pellet tube smoker has worked flawlessly every time from smoking cheese to any kind of meat. I have a file cabinet smoker that I built and I will always set the cheese on the top shelf and the smoker on the bottom so it doesn’t get the harshness that some people complain about.     Good afternoon, judging by the video, you have too large sawdust in the labyrinth smoke generator and they are also raw, so the smoldering is interrupted, they can be dried in the microwave and nothing needs to be compacted and will not go out. In addition, the side walls of the maze should be solid, as in the Weber design, and not mesh, this will protect against inter-turn transfer of decay. You have not had this happen because of wet sawdust. These are two different devices - the labyrinth is designed for conditionally "cold" smoking with a temperature of 25-30 degrees Celsius, and the tube is for "hot" with a temperature of 40-50 degrees, it warms up the smoking chamber itself. Both devices work well if they are used for their intended purpose and correctly, sorry.

      I bought this smoke generator off of Amazon and I also bought the sawdust. They recommended for it off of Amazon. This is pre-dried just like the pellets were. Both these are supposed to be ready to use. The idea behind the video was to show both the smoke generator with the store-bought sawdust, and the smoke tube with the store-bought pellets worked as they were supposed to. Once lit the pellet tube smoker worked flawlessly every time. But the smoke generator kept going out about every hour. I still use it for cold smoking cheese, but I have to check it occasionally. I did not see the smoke generator you were talking about. If you have a link to one, I would love to try it. Thank you for your input.

    Brilliant review! I just bought those apple wood pellets, seems they work well in your video. Do you dry those pellets before filling up the tube? Do you stuff them hard or just normal fill?

      The pellets are dry in the bag when you get them. I have used them multiple times and they’ve worked every time. What I do is hold the pellet tube in the bag and fill it with my hand until it comes to the top then I just shake off what’s sticking out. You want the air space in between the pellets so they get oxygen to burn. Just a normal fill. I’m glad you enjoyed the video.

I like to make sure that they are working the way they should before I recommend anything. I actually went out and bought me a couple of more of them, for when I’m doing something that requires me to smoke it more than four or five hours I bought mine on Amazon.     What about putting pellets in the sawdust smoker? Not as it was intended but maybe get some use out of it.

      I’m not sure that that would work, but I have not tried it. These are actually designed for sawdust use. In the directions they call for sawdust lightly packed below the rim of the unit. Then you light it with a tea candle placed in the hole provided. I have not found any tea candles that small, so I used a small torch to light it. What I think the issue is with this particular one is the expanded metal it’s made from. I do not think the holes are large enough to let a proper amount of oxygen in to keep it burning. Fire needs three things to properly work. Fuel, heat and oxygen. If you remove any one of those three there will be no fire. it was full of fuel. It was lit and burned for a while, but then just went out multiple times so I’m pretty sure it’s the oxygen. Thanks for the comment.
