Barolo chinato is not really a "digestivo" but a dessert wine (especially with dark chocolate. It is not widely known, but really wonderful. I managed to set up a proper formulation, grabbing some "secret" details at the Marchesi di Barolo winery, in Barolo, and experimenting. Besides specific herbs you need a good Barolo and at least one year of resting.

Why this music from deep south of Italy? The exact opposite (geographically) from Piemonte

I know - a couple reasons: 1- We like the music, but 2- I'm not familiar with traditional music from the Piemonte area that would go well with a video like this. If you know of any or can recommend some, please let me know! I'm always looking for new music, especially if it would fit the video better. Thanks!

Picking out music isn't easy and we know that some people may not like our choices. We use real Italian music instead of generic "TH-cam" pseudo techno classical elevator music. We like a lot traditional Pizzica and Tarantella music and feel that it suits the subjects most of the time. Sometimes it doesn't. Oh well, you can always put it on mute or watch a different channel.
