How to boil "Somen", Japanese summer noodles

  • 【40 Years Cooking Research】The secret of boiling Somen. I'll show you two points to boil it really deliciously. In this way, Somen don't stick together and no sliminess. I'll also show you how to make exquisite "Mentsuyu", soup of Somen or Udon.

    ▼Ingredients
    Somen noodles ("Shimanohikari" from Shodoshima Island in Kagawa Prefecture) : 2 bunches
    amzn.to/3vwalXe
    "Niboshi", dried sardines : 20g
    "Konbu", dried seaweed : 10cm
    Water : 2 cups (360cc)
    Soy sause : 2 cups (360cc)
    "Mirin", sweet rice wine : 2 cups (360cc)
    The water used for boiling bamboo shoots / cooked ones : the desired amount
    Sesame seeds : as you like
    ▼Points of Boiling
    Boil Somen with plenty of hot water.
    Cover with the lid and turn off the stove when the water wells up again.
    Don't boil too long.
    Please wait for about 3~5 minutes.
    Tighten the noodle with cold water and some ice.
    Get rid of the sliminess well.
    ▼Points of Making "Mentsusyu"
    When you eat "Mentsuyu", thin it down with water.
    Soak "Niboshi" and "Konbu" in water for an hour.
    Don't boil it too much.
    For the soup of Somen, the water used for boiling bamboo shoots goes well.
    Just before starting up boiling, turn off the heat.
    Once it's cooled, keep it in the fridge.
