2kg cucumbers
90g salt
400〜450g sugar
40g powdered mustard
Recommend: "Powdered Oni Karashi Mustard" by brand YAMASEI.

A random cut makes the taste better.
The tips of both sides are bitter, so you should cut them off.
Use powdered mustard.

    J'ai essayé cette méthode pour préparer des somen hier (sans glaçons cependant) et c'est épatant, ils étaient délicieux! Je les ai surveillé et sortis de l'eau chaude avant 5 minutes parce qu'ils me semblaient suffisamment cuits. Ensuite je les ai bien lavés/rincés à grande eau, et je les ai laissé dans l'eau pendant au moins 1h avant de préparer le reste du repas, et ils n'avaient pas absorbé l'eau de trempage.     Greetings from New Zealand. Another fabulous recipe. Funny, because yesterday I was looking at the pickled cucumbers I had done with soy sauce base (the only recipe I know for pickled cucumbers), and I was wondering if I could use mustard or Wasabi in a pickle because I love both of those, then this morning your videos showed up in the recommendations 😀 I do a lot of Japanese style cooking. I love the simplicity, and it is so much healthier than the standard Western diet. I am always looking for traditional recipes, many Japanese cooking channels I see now use more Western style foods, like Spam.
