You can have those other parts , I don’t use them . I also turn the body inside out and clean them . Now I have made tomato gravy , next I stuff the calamari with a seafood blend and stuffing bread combined. Then I take a toothpick and run it in and out of the end to keep the stuffing from coming out. Then I put them in the tomato sauce and cook them until their tender . I serve them with a nice side of linguine and a green salad with a nice cold beer or wine . Salute !

Dear Alessandra, This recipe os not an italian recipe but a mediterranean recipe. You can find it in Spain, Italy and Grece as well. I think in USA you make offten The same mistake: you think al meditarranean recipes are italian, and this is not true. Have a nice day.

Classic Greek style grilled calamari. Whenever I grill it I seem to overcook it or under cook it how do you know when it’s done?
