How To Make Gruyere Broccoli & Bacon Gratin - Recipe

  • Per a request from a long-time subscriber and frequent commenter on Kuma’s Kitchen, I developed a dish that takes broccoli to another level.

    INGREDIENTS
    2 tbsp butter
    7 oz (200g) bacon block, cut into 1/4” x 1/4” (5mm x 5mm) sticks
    1 onion, chopped
    1 head broccoli, cut into florets
    3 eggs
    1/4 cup heavy cream (30%)
    3 oz (85g) Gruyere cheese, grated
    1/2 tsp salt
    1 tsp pepper
    2 oz (55g) Gruyere cheese, grated
    2 oz (55g) Mozzarella cheese, grated
    1/2 cup Panko breadcrumbs
    DIRECTIONS
    1. Melt butter in fry pan on medium heat. Add bacon and onion. Cook, stirring occasionally, for 10-12 minutes.
    2. Either boil or steam broccoli for 5-6 minutes.
    3. In a large bowl, whisk eggs. Add cream, 3oz Gruyere, salt, and pepper. Combine.
    4. Fold in bacon, onion, and broccoli.
    5. Spread mixture in a buttered 8x8 baking tin.
    6. Combine remaining Gruyere, Mozzarella, and breadcrumbs. Sp@read over the broccoli mixture.
    7. Bake at 350°F (180°C) for 25-30 minutes.
