  • 5 LBs peeled garlic cloves
    1 medium onion
    Some vegetable oil
    Steps:
    1. Rinse and dry garlic cloves
    2. Remove dried brown garlic roots
    First way: Slice 1-2 cups of garlic and store in a jar with vegetable oil; make sure to submerge garlic slices in the oil. Store in the refrigerator.
    2nd way: Crush garlic and onion, then store in a jar with vegetable oil; make sure to submerge crushed garlic in the oil. Store in the refrigerator.
    3rd way: Store Crushed garlic in a jar without adding any oil. Store in the refrigerator.
    4th way: Freeze crushed garlic in a plastic bag.
    5th way: Freeze whole garlic cloves in a plastic bag.

    You don’t even need the oil … just mince and put into ice cube tray press down to compact the garlic once frozen you can pop them right out into a zip lock bag for easy access

      Most canola is chemically extracted using a solvent called hexane, and heat is often applied which can affect the stability of the oil's molecules, turn it rancid, destroy the omega-3s in it, and can even create trans fats. But it's still good oil.

    When you buy it like that, fermenting whole cloves in a 2.5% salt brine is a good way for long term storage.
    I grow garlic, and after it's cured I simply braid a dozen heads together. Stored in a cool dry place, it literally lasts for 4 to 8 months. (depending on the type). It's also very cool looking as it hangs in your kitchen.

      I also grow garlic and usually braid it for storage. However this year we had drought, then big downpours, then drought, then more storms. The garlic didn't grow well, and got knocked flat in the last rains, so I have a lot of small heads. My chef (husband) doesn't like messing about with small garlic cloves, so I thought I'd try preparing them so he just has to use a spoonful or two. I'm not sure if there's enough for freezing, but a jar each of sliced & chopped in oil, and maybe one in brine might make sure that the crop isn't wasted.

      After the pandemic, the garlic prices are much cheaper than before. But I still buy the large bag and store on the freezer, just like what I expanded on TH-cam. It's much more economical and convenient.

    Storing garlic in oil without using citric acid is dangerous. That oiled garlic shouldn't be kept in the fridge, it's possible that it's okay as you got the cloves out of a bag so they are already preserved but that's definitely NOT okay for fresh garlic.

    What's the mame brand of that oil? I think she's using the a cheap one to store the garlic but Canola oil is not good.

      The color usually stay white for a few months, then it can turn slightly dark, or light brown, but it's still safe to eat.

      @@tristpaking8818 next time you do it add some vinegar or a tablespoon of fresh lime juice to a small amount to experiment. I'm from the Caribbean and we like to mince our green herbs for a wide variety of dishes. I buy my herbs in bulk and add lime juice and a bit of oil and it stops oxidation. I'm trying the garlic, will update you on how it holds up if you're interested.

    I do not believe this will preserve the garlic. I could be wrong. But I tried this years ago and the garlic spoiled. I would like to understand this but please do plenty 9f homework

      The frozen garlic will last long for several months, and the one in the oil will last for a month. That's how I've been doing it for many years, and it never spoiled. Please make sure your jar is clean and store in the refrigerator.

      I am an old time canner gal. It's how my family lived for years. Garlic is too low in acidity to be able to not get botulism. I would just caution you to warn people that you can not be held responsible if something goes wrong. A disclaimer. I seriously was going to give the garlic oil out as Christmas gifts. But i seen in a couple weeks something was very wrong. I don't know how you could be keeping it for a month. I am not making this up. I don't want to see anyone get hurt or in trouble. It was just a caution warning.

      You don't freeze in the jar with oil.
      You can freeze the garlic in a bag, then put it in the jar with oil when you need to use it.

      There are many researchers who have shown that
      Canola oil is rich in vitamins E and K and contains twice as much omega 6 as omega 3 fatty acids. However It is not a good oil for frying. So it is ok to use for this recipe.

    Suggestion that oil is not good !! better use a good Olive oil or Avocado oil...i am surprised a live video like this one & earn $$ ?? my goodness
