We mince the garlic 🧄 and put it into 1 gallon zip freezer bags. Flattening it out, taking all the air out. Then score the bags slightly from the outside into squares with a brunt knife. We can stack all of these flat bags into the freezer 🥶 and take out a bag to break off a square pieces as we need fresh garlic. Shalom to you 😊

That's the way we do our garlic also. It tastes just like the day we did it. Only difference is we freeze it on trays flattened and separated then we put it in vacuum sealed bags so it doesn't get freezer taste from ice buildup in the bags
Greetings from Tennessee. I haven't read through the other comments, so someone might have already suggested it, but you should have saved the water you had from rinsing the garlic. When sprayed on your garden it acts like an organic bug deterrent. A late comment about your composting video is if you don't have access to a lot of leaves, use shredded newspapers. I compost grass clipping (which is a slow process) and always run out of leaves before summers end. Even if you don't subscribe to a paper, most local markets have free community "papers." A local paper delivery person is a good source as well. I also use a tonic on each layer of grass that does wonders. 1 can beer, 1 can dark non-diet cola, and 1/4 cup ammonia. I mix that in a 2 quart rose pump sprayer topped off with water. Keep up the good work and may God bless you all.
One thing worth mentioning is if you freeze dry your garlic try and make the next 2 batches something that is garlic flavor friendly. I did wash the chamber with soap and water after the garlic batch, but there was still a lingering smell of garlic for the next two batches. Thankfully i ran some burger and then chicken, instead of getting garlic flavored peaches.
fI learned about this method from the "Old Alabama Gardener" a couple of years ago. This is my favorite for medicinal ingestion. I mince the garlic as you did (any method is ok) Then I put it in jars 2/3 to 3/4 full. I then pour organic honey over it stir out the air, and cap it with a fermenting nipple top. Let it sit for 4 weeks. Stir once a week. Put in refrigerator and consume a Tbsp. daily.
Loved your suggestion of planting next to my berries to repel Japanese beetles. We will definitely try that. I used some of my garlic to flavor olive oil and it's an easy and quick way to use it without having to peel. I am debating of getting a food processor that comes with, or you can buy, additional blades with different thickness of cuts that range for a 1/8inch (3mm) to 3/8inch (9mm) I also save the best of the best for replanting, and the second best for the cold room. I find harvesting the garlic a week before you think you should really helps the storage life. My favorite use for garlic is chicken scampi. I marinade the chicken in lemon juice and Old Bay seasoning. After the chicken has browned in the frying pan i add equal amounts of butter and olive oil. The last minute i add the lemon zest and a heaping pile of minced garlic.
I store some of mine in canning jars and cover the peeled cloves with soy sauce. The Oriental culture uses this method and it stores for years without processing. I use it in stir fry and other dishes that call for soy sauce and garlic. I also braid some, and mince
I put my peeled garlic cloves into my food processor, chop til it’s minced well, add a little avocado oil for the last pulse or two, and put it in an ice cube tray with a lid and freeze. I pop them out once frozen, and double bag them in freezer ziplocks. Nice size to pop into a frying pan with sautéing onions, or can be cut into pieces or slices for different amounts. Tip: my hands are bad, so I buy the garlic pre-peeled at my market.
I've been listening as I'm grilling chicken, didn't see the actual amount of garlic in halfway through the video. HOLY MOLEY! I'd be in heaven! I love to dehydrate and leave some as sliced and some as powdered. It is so intense, I just loooove it. I make my own pasta sauce using water bathed tomato paste, and the homemade powder just kicks it up. Store bought just doesn't compare.
Recipe for kicking a cold: peeled garlic cloves in a jar covered with raw honey. Turn jar upside down daily. Leave on counter for about a month while it ferments. Burp regularly. Store in frig. At the first sign of a cold, eat some honey and garlic cloves.

We plant hardneck German garlic in late October and harvest the following July. It's got a little spiciness to it for extra zing! I don't have a recipe per se but freeze dry my version of mirepoix: adding garlic to the chopped onion, celery, and bell pepper. I don't cook it beforehand (avoiding adding oils). I can't tell you how good it smells 🙂 I love the shake shake shake method of peeling garlic - THANK YOU!
We braid ours after harvesting and they keep until the following summer. We grow Bulgarian Beauty variety (soft neck) about 200 heads a year. It’s a great keeper. We just use it fresh as we need it.
Blessings from Chicago. I live in an apartment. I can, dehydrate and can my food preps. I try to be thoughtful of my neighbors when I dehydrate leeks, onions, garlic and peppers. I try to start the process in the oven but I'm afraid of bacteria growth. I also start them on a lower temp for a few hours. The good thing is, I live on a floor full of cooks. No one has complained yet. I love roasted elephant garlic but it is so costly.
Ferment your garlic...I do mine and have it in a large jar in the refer. Whenever I want any garlic I lift the lid and it is good to go. It will continue to ferment while in the refer. Fermented garlic is very good for you.
I found at the 99 cents store- they have a mini clothes line. It’s a plastic frame that has clothes pins on them, about 20 of them (looks like there is only room enough in between each clothes pins). It has a hanger in the middle so, I was able to hang my garlic off of this to dry (had to double up on some). Worked great!
I'm growing garlic for the first time this winter. So excited for my first crop this coming summer! Thanks for the video. I'll save it to refer back to this summer when I need to figure out how to preserve it! One thing that I am going to do is make a flavored extra virgin olive oil with dill weed and minced garlic. I just made Ukrainian garlic bread last Sunday and that's what they use. Just pour it over top still warm fresh baked buns. Amazing! 🤤. I bet it would be delicious on other things too.
I hope you guys go back and check comments on old videos because...inspired by YOUR success, I managed to grow my first crop of garlic and harvested it last week. (It was about a month earlier than expected, not only for me but for other youtubers I have watched.) I planted hardneck and will do hardneck again because of the storage issue. My HR FD has been out of kilter now for many months and I gave up on that. Garlic happy!!!
I would say one of my favorite things to do with garlic is make garlic Confite. Just slow simmer it in some beautiful olive oil. Then when it’s like little caramel candies separate them out from the oil. Then you can use it on bread like butter. Or definitely use it in focaccia bread.
I prepped a bunch of bulbs for freezing today. I tried that shake method because I heard about it a few years ago but wasnt thrilled with the results, but I didn’t cut off the ends first. I ended up getting half way through and just crushing the cloves with a knife instead and used a food processor to chop it. You guys did a ton though!! I spent about 90 minutes but it looks like there was a days worth if work in this video! After peeling and removing the paper I realized I should’ve worn gloves too lol! I tried hand soap, dawn, and scrubbing with baking soda, odor is still there, oh well.
I'm a gardener & truth seeker living in Melbourne, Aust. This was a really great video. Truly inspiring. I have some friends that grow their own garlic... I have growing areas that are well prepared, & will be getting right into this crop. Also, I love the idea of planting it all over the place - it's highly inline with my existing approach to having creative foliage mixes etc all over. Do you think it would work well to melt coconut oil and mix in chopped garlic and refrigerate? It seems like that would be good to use by spoonful in cooking.

Everyone I've talked to says garlic is hard to grow in southern Arizona. You make it look so easy! Hint: pour hot water over garlic in a bowl, wait 5 minutes, skins fall off!
I loved your video on garlic. It was very informative! I on the other hand roast all of my garlic in olive oil. I purée it in a blender then I have 2 in.² cube silicone ice cube trays that I like to put them in let them freeze. Take them out and put about 6 to 8 cubes in a seal bag and seal them all up and throw them in the freezer that eliminates the smell to other things lol. Thanks a lot for your video. I loved it a lot!
There have been studies done on garlic consumption and ticks and garlic seems to be working as a repellent! Worked definitely for me this spring when ticks were just horrible! I would find them on me but they did NOT attach!
I just peeled all my garlic today and just put it in a quart jar in the fridge ,but I wished I had a freeze dryer but very expensive here in Canada so I will try dehydrating it ,thanks for a great video
For peeling the garlic i found a suggestion about using a glass jar. So I use an old pickle jar I cleaned with it's lid and it works pretty well for peeling garlic. Might be a bit easier than trying to hold two bowls together.
I freeze. I process through a food processor, mashing a bit first (they process MUCH faster if not 'smooth sided') a just a little oil and then use my smallest scoop to measure out a tablespoon onto a lined 1/2 sheet tray. Freeze overnight and then package 10 to a small freezer bag, or vacuum pack, 10 per. I have more control with measurements over ice cube trays and don't have to store 15+- trays.
@@maranatha5555 I've done enough to last 6 months, so at least that long. The vacuum packing is best for longer storage. My scoop is a tablespoon size. (though, to be honest garlic is a 'measure by heart' thing with me

I use my food processor to chop my garlic cloves but instead of using a grating blade I use a chopping blade. No rinsing necessary. Then I dehydrate, or freeze in small cubes. Either way, I store in mason jars dried(some powdered) or keep frozen for adding to recipes.
We were given some hard neck garlic for eating and planting several years ago. We live in zone 6. I plant in October and harvest in august. Carefully dry on our porch out of the sun. Then I braid and hang in my sunroom that is heated but has an unheated floor. Garlic keeps from august to April just hanging.
Garlic Noodles that I found on TH-cam.. I believe it is a San Francisco speciality. It is really good and uses about 6 cloves of garlic & angel hair pasta (my fave). I also like tuna, garlic, and oil with bow-tie/farfalle pasta. (saute the garlic for 1 minute in the oil then use as a dressing over the tuna & noodles. I am all about simple. I like quick easy simple recipes and use them often. I am trying to grow garlic this fall again. So far I haven't had much luck. I tried in my greenhouse which has the most sun available in the backyard. My garden gets a lot of partial shade and as it comes from neighbors trees as well as the ones here and I rent so nothing I can do about it. I have considered trying to put some in containers on the front deck which gets full sun and may try some that way. I really like the idea though of putting my garlic all over the garden because then I can discover where it grows the best. I will go with that this year as I will be planting my garlic this month. Thanks for the help on what to do with it as well. I don't have a freeze dryer so will dehydrate and make powder. I would also like to try a garlic marinade. I love to experiment with small batches. I have a small backyard garden with raised beds so am limited space wise. My landlord ok'd the garden and greenhouse btw.

Dehydrated garlic makes some amazing fresh roasted granular garlic powder! So fresh, and nothing like store bought granulated garlic. FD garlic has a super intense almost hot flavor, it is sooo delicious!
I'm working on an experiment for the next couple of years with garlic bulbs. I stored a few in a cool, dry basement for a few months - already used them all. Quality was good. I may have been able to get more longevity out of that storage method if I had stored more of them. I also placed 3 bulbs in 3 FoodSaver resealable vacuum bags (with the oxygen extraction flap) for a total of 9 bulbs. I plan to use them over the course of the next couple of years so I can determine if freezing keeps them almost like fresh, and usable. I'm about ready to open the first vacuum sealed bag. FAVORITE RECIPIE = Lemony piccata with either chicken or veal. Fresh parsley, capers, chicken stock, butter and dry white wine complete the sauce.
@@maranatha5555 It works well for keeping the bulbs. I still have 1 bag of 3 bulbs in the freezer. The garlic does become a bit spongy so, if you need firm garlic, the freezing method won't work. The strength and quality of the flavor is no different than fresh garlic.
If I don't have more than a few pounds at most of fresh garlic, I will mince them all up, put them in a quart jar when minced and top off with a good virgin olive oil. I'll keep it in my fridge and use when needed. I've had mine last about a year. Don't know if it would last longer, since I'm always making new before then. I do have a dehydrator which I also use, mainly to make garlic powder. Wish I could afford a freeze dryer but, the way things are right now and the need to buy a new large pressure caner takes priority over the freeze dryer. I do have a question though, I never grew garlic but could garlic be vacuum sealed in mason jars if I do buy some or start harvesting it on my own? I must admit, I don't have a lot of room, but I did plant a dozen cloves because it was supposed to deter the animals. The squirrel and raccons dug them up, but only gnawed a few. I replanted and now they just sit on them and break the tops. I will harvest in a couple of weeks, but I don't expect a lot. The tricks are good....my freeze dryer is in the basement, but I can stick the dehydrator outside, so I may try that if I can keep the raccoons at bay.

Thank you for your video! I've had better luck getting jars and jars of garlic packed in oil from the dumpsters than I ever had growing the stuff. The first time I used store bought garlic, (product of China) not knowing it had been treated and would not grow. Then I got some local organic garlic and got all kinds of it planted in the fall only to have my chickens dig up every one and I guess they ate it because there wasn't a clove to be found. I haven't tried again, ... but you give me "hope" and I love to hate "hope". The way I look at it is, as long as I'm sitting on my bum "hoping", I'll never get off my bum and do something that I'm hoping about. Convoluted I know. But that's just the way I am. SO! I "will" plant more garlic this fall, ... It's all about the "will" eh? Speaking of chickens, I got a broody hen last week and she was a Madhen, a Crazyhen, and she actually picked a hole in one of my other chickens so I threw some eggs into a box (I don't even know if they are fertile)(The fox got the rooster months ago) and haven't seen her since. I put polysporin on the poor holey bird and it's doing well now. OK, 14 pints of chicken and beef and two didn't seal! I love to hate that too. Gotta make that positive somehow eh? But the beef sandwiches I just ate were GREAT! I'm boiling (simmering) the snot out of the chicken bones, fat, and skin, and will use the unsealed pint of chicken for the stock I collect after I've gotten rid of the fat, skin, and bones. Gotta love a little meat for your stock. Have a great one guys, it's getting really strange here with the local stores all claiming they are being "shorted" on their food orders. And the local wholesalers has half their inventory listed as "Out Of Stock". This is unheard of. The stuff keeps rolling into the Big Box stores I notice, .. but the local outfits are having problems. Good luck.
I have heard that the new ForJars canning lids always seal. I haven’t tried them yet but I think I will order some soon to try. I still have plenty of lids. But to get some that would retry much always seal would be awesome.

That only works with the super easy to peel garlic like you have. The jumbo ones! THis year I got the tiniest garlic and this technique absolutely does not work at all! It works wonders with big cloves like in your video.
What are your favorite varieties to grow and why? As for a recipe, I've always liked aglio e olio if you have fresh parsley. It's like 6 ingredients and if they're all fresh it's life-altering and will take about a head of garlic.
I've been fermenting cloves with slices of turmeric, ginger, and peppercorns. It becomes so mild you can eat a whole clove without wincing! It makes for a pleasing flavour variation, but not strong enough for a good garlic flavour in cooking.
Dehydrating or freeze drying are both good options. You can dehydrate in your oven on a low temperature with the oven door propped a little open to allow the moisture to escape if you don't have a dehydrator. Drain the liquid first.
I’ve been looking for that method too. I believe the commercial jars of garlic use citric acid. I haven’t found anything on TH-cam on that process, which may mean it can’t be duplicated at home. I’m fermenting it. So yummy and healthy.
I’ve always dehydrated but now I have a freeze dryer. I will freeze dry next year’s harvest but I will need to move the machine outside to my covered outdoor kitchen.
A few pulses in a food processor makes short work of that process. I pulse to have minced garlic before I freeze dry or dehydrate it. I don't like minced garlic in the fridge, but the food processor chops it just like it
I saw a vid on fermenting it, so I'm trying that. Supposedly when it's done it would be used more like a spread because it will turn out kinda mushy. But I'm ok with that too!
I got a question during your last minute on your video you mentioned something about you can put Garlic in a little bit of oil and freeze it I don't know if you had water with it or not. A few months ago I was reading cuz I was wondering how to make pesto and one of the things I read was that you don't put raw garlic in oil and leave it setting in it because it can become toxic or something some kind of physical or chemical change that makes it unhealthy do you know anything about this?

My favorite soup seasoning is black pepper, oregano, onion powder, garlic powder, red pepper flakes, (BOOGRs) 1 teaspoon each, very delicious. Garlic and ginger root is the trilogy of Eastern cooking to flavor oil before stir frying. Onions, celery, carrots, or onions, bell peppers, carrots, is the trilogy of Western soups. Garlic is a global gourmet treat as is Provident Preppers. Love, great job.

This is great! The problem with rinsing though is the loss of the allicin which is it’s main reason it’s so beneficial.

It has a hanger in the middle so, I was able to hang my garlic off of this to dry (had to double up on some). Worked great!

One thing that I am going to do is make a flavored extra virgin olive oil with dill weed and minced garlic. I just made Ukrainian garlic bread last Sunday and that's what they use. Just pour it over top still warm fresh baked buns. Amazing! 🤤. I bet it would be delicious on other things too.
I hope you guys go back and check comments on old videos because...inspired by YOUR success, I managed to grow my first crop of garlic and harvested it last week. (It was about a month earlier than expected, not only for me but for other youtubers I have watched.) I planted hardneck and will do hardneck again because of the storage issue. My HR FD has been out of kilter now for many months and I gave up on that. Garlic happy!!!

I would say one of my favorite things to do with garlic is make garlic Confite. Just slow simmer it in some beautiful olive oil. Then when it’s like little caramel candies separate them out from the oil. Then you can use it on bread like butter. Or definitely use it in focaccia bread.

I prepped a bunch of bulbs for freezing today. I tried that shake method because I heard about it a few years ago but wasnt thrilled with the results, but I didn’t cut off the ends first. I ended up getting half way through and just crushing the cloves with a knife instead and used a food processor to chop it.
You guys did a ton though!! I spent about 90 minutes but it looks like there was a days worth if work in this video!
After peeling and removing the paper I realized I should’ve worn gloves too lol! I tried hand soap, dawn, and scrubbing with baking soda, odor is still there, oh well.
I'm a gardener & truth seeker living in Melbourne, Aust. This was a really great video. Truly inspiring. I have some friends that grow their own garlic... I have growing areas that are well prepared, & will be getting right into this crop. Also, I love the idea of planting it all over the place - it's highly inline with my existing approach to having creative foliage mixes etc all over. The pest control situation input is a real bonus too. Next up, you'll have to do a video showing Jonathon getting his hands dirty with a round of planting? No more dodgy supermarket jars, hey! Good on you both.
Jon actually doesn't do much of the planting. That's my thing. He is very helpful at harvesting :)
Do you think it would work well to melt coconut oil and mix in chopped garlic and refrigerate? It seems like that would be good to use by spoonful in cooking.

I loved your video on garlic. It was very informative! I on the other hand roast all of my garlic in olive oil. I purée it in a blender then I have 2 in.² cube silicone ice cube trays that I like to put them in let them freeze. Take them out and put about 6 to 8 cubes in a seal bag and seal them all up and throw them in the freezer that eliminates the smell to other things lol. Thanks a lot for your video. I loved it a lot!

I simply eat a raw clove every day in the fall-winter-early Spring as a flu preventative. Seems to help.
There have been studies done on garlic consumption and ticks and garlic seems to be working as a repellent! Worked definitely for me this spring when ticks were just horrible! I would find them on me but they did NOT attach!
I just peeled all my garlic today and just put it in a quart jar in the fridge ,but I wished I had a freeze dryer but very expensive here in Canada so I will try dehydrating it ,thanks for a great video
Favorite garlic recipe is minced garlic sautéed in butter or olive oil and tossed with pasta.
For peeling the garlic i found a suggestion about using a glass jar. So I use an old pickle jar I cleaned with it's lid and it works pretty well for peeling garlic. Might be a bit easier than trying to hold two bowls together.

I never learned much about garlic, so this is my first year using and planting fresh garlic.
I freeze. I process through a food processor, mashing a bit first (they process MUCH faster if not 'smooth sided') a just a little oil and then use my smallest scoop to measure out a tablespoon onto a lined 1/2 sheet tray. Freeze overnight and then package 10 to a small freezer bag, or vacuum pack, 10 per. I have more control with measurements over ice cube trays and don't have to store 15+- trays.

Get yourself a small mini food chopper at Wally, they work wonderful!
Please don't damage your tendons in your hand and wrist by banging the chopper. Trust me. A hand is not a hammer.
I use my food processor to chop my garlic cloves but instead of using a grating blade I use a chopping blade. No rinsing necessary. Then I dehydrate, or freeze in small cubes. Either way, I store in mason jars dried(some powdered) or keep frozen for adding to recipes.
We were given some hard neck garlic for eating and planting several years ago. We live in zone 6. I plant in October and harvest in august. Carefully dry on our porch out of the sun. Then I braid and hang in my sunroom that is heated but has an unheated floor. Garlic keeps from august to April just hanging.

The Outer Clove is an interesting restaurant in Nelson BC. Every item on the menu has garlic in it, including the ice cream!
Garlic Noodles that I found on TH-cam.. I believe it is a San Francisco speciality. It is really good and uses about 6 cloves of garlic & angel hair pasta (my fave). I also like tuna, garlic, and oil with bow-tie/farfalle pasta. (saute the garlic for 1 minute in the oil then use as a dressing over the tuna & noodles. I am all about simple. I like quick easy simple recipes and use them often.
I am trying to grow garlic this fall again. So far I haven't had much luck. I tried in my greenhouse which has the most sun available in the backyard. My garden gets a lot of partial shade and as it comes from neighbors trees as well as the ones here and I rent so nothing I can do about it. I have considered trying to put some in containers on the front deck which gets full sun and may try some that way.
I really like the idea though of putting my garlic all over the garden because then I can discover where it grows the best. I will go with that this year as I will be planting my garlic this month. Thanks for the help on what to do with it as well. I don't have a freeze dryer so will dehydrate and make powder. I would also like to try a garlic marinade. I love to experiment with small batches. I have a small backyard garden with raised beds so am limited space wise. My landlord ok'd the garden and greenhouse btw.

@@colleenpritchett6914 It’s been a bit, so I can’t remember the exact number of cloves, and it’s the only time I’ve done it. My apartment smelled like garlic for days after I strained & decanted the tincture!😅 There are some great videos on here that can help you out, though.
Dehydrated garlic makes some amazing fresh roasted granular garlic powder! So fresh, and nothing like store bought granulated garlic.
FD garlic has a super intense almost hot flavor, it is sooo delicious!
I'm working on an experiment for the next couple of years with garlic bulbs. I stored a few in a cool, dry basement for a few months - already used them all. Quality was good. I may have been able to get more longevity out of that storage method if I had stored more of them. I also placed 3 bulbs in 3 FoodSaver resealable vacuum bags (with the oxygen extraction flap) for a total of 9 bulbs. I plan to use them over the course of the next couple of years so I can determine if freezing keeps them almost like fresh, and usable. I'm about ready to open the first vacuum sealed bag. FAVORITE RECIPIE = Lemony piccata with either chicken or veal. Fresh parsley, capers, chicken stock, butter and dry white wine complete the sauce.

@@maranatha5555 It works well for keeping the bulbs. I still have 1 bag of 3 bulbs in the freezer. The garlic does become a bit spongy so, if you need firm garlic, the freezing method won't work. The strength and quality of the flavor is no different than fresh garlic.
If I don't have more than a few pounds at most of fresh garlic, I will mince them all up, put them in a quart jar when minced and top off with a good virgin olive oil. I'll keep it in my fridge and use when needed. I've had mine last about a year. Don't know if it would last longer, since I'm always making new before then. I do have a dehydrator which I also use, mainly to make garlic powder. Wish I could afford a freeze dryer but, the way things are right now and the need to buy a new large pressure caner takes priority over the freeze dryer.

I must admit, I don't have a lot of room, but I did plant a dozen cloves because it was supposed to deter the animals. The squirrel and raccons dug them up, but only gnawed a few. I replanted and now they just sit on them and break the tops. I will harvest in a couple of weeks, but I don't expect a lot. The tricks are good....my freeze dryer is in the basement, but I can stick the dehydrator outside, so I may try that if I can keep the raccoons at bay.

I've had better luck getting jars and jars of garlic packed in oil from the dumpsters than I ever had growing the stuff.
The first time I used store bought garlic, (product of China) not knowing it had been treated and would not grow.
Then I got some local organic garlic and got all kinds of it planted in the fall only to have my chickens dig up every one and I guess they ate it because there wasn't a clove to be found.
I haven't tried again, ... but you give me "hope" and I love to hate "hope".
The way I look at it is, as long as I'm sitting on my bum "hoping", I'll never get off my bum and do something that I'm hoping about.
Convoluted I know. But that's just the way I am.
SO! I "will" plant more garlic this fall, ... It's all about the "will" eh?
Speaking of chickens, I got a broody hen last week and she was a Madhen, a Crazyhen, and she actually picked a hole in one of my other chickens so I threw some eggs into a box (I don't even know if they are fertile)(The fox got the rooster months ago) and haven't seen her since.
I put polysporin on the poor holey bird and it's doing well now.
OK, 14 pints of chicken and beef and two didn't seal! I love to hate that too. Gotta make that positive somehow eh?
But the beef sandwiches I just ate were GREAT!
I'm boiling (simmering) the snot out of the chicken bones, fat, and skin, and will use the unsealed pint of chicken for the stock I collect after I've gotten rid of the fat, skin, and bones. Gotta love a little meat for your stock.
Have a great one guys, it's getting really strange here with the local stores all claiming they are being "shorted" on their food orders. And the local wholesalers has half their inventory listed as "Out Of Stock". This is unheard of.
The stuff keeps rolling into the Big Box stores I notice, .. but the local outfits are having problems.

I have heard that the new ForJars canning lids always seal. I haven’t tried them yet but I think I will order some soon to try. I still have plenty of lids. But to get some that would retry much always seal would be awesome.

That only works with the super easy to peel garlic like you have. The jumbo ones! THis year I got the tiniest garlic and this technique absolutely does not work at all! It works wonders with big cloves like in your video.

As for a recipe, I've always liked aglio e olio if you have fresh parsley. It's like 6 ingredients and if they're all fresh it's life-altering and will take about a head of garlic.

QUESTION... after you freeze dried the garlic, how did you vacuum seal the Ball jars? Or are they not vacuum sealed at all?
I've been fermenting cloves with slices of turmeric, ginger, and peppercorns. It becomes so mild you can eat a whole clove without wincing! It makes for a pleasing flavour variation, but not strong enough for a good garlic flavour in cooking.

I’m wondering how to preserve chopped garlic in liquid in jars, the way you can buy it in the stores.
Dehydrating or freeze drying are both good options. You can dehydrate in your oven on a low temperature with the oven door propped a little open to allow the moisture to escape if you don't have a dehydrator. Drain the liquid first.
I’ve been looking for that method too. I believe the commercial jars of garlic use citric acid. I haven’t found anything on TH-cam on that process, which may mean it can’t be duplicated at home. I’m fermenting it. So yummy and healthy.
I don’t have a storage room. I live in Florida and with my A/C set on 76 or 77, is that cool enough to store garlic?
I’ve always dehydrated but now I have a freeze dryer. I will freeze dry next year’s harvest but I will need to move the machine outside to my covered outdoor kitchen.
What's you philosophy on rotation? I've heard three years minimum for one spot. I've rotated to avoid disease in soil and to build up soil again.

A few pulses in a food processor makes short work of that process. I pulse to have minced garlic before I freeze dry or dehydrate it. I don't like minced garlic in the fridge, but the food processor chops it just like it

I saw a vid on fermenting it, so I'm trying that. Supposedly when it's done it would be used more like a spread because it will turn out kinda mushy. But I'm ok with that too!

I got a question during your last minute on your video you mentioned something about you can put Garlic in a little bit of oil and freeze it I don't know if you had water with it or not. A few months ago I was reading cuz I was wondering how to make pesto and one of the things I read was that you don't put raw garlic in oil and leave it setting in it because it can become toxic or something some kind of physical or chemical change that makes it unhealthy do you know anything about this?
Don't add water with oil to freeze.

My favorite soup seasoning is black pepper, oregano, onion powder, garlic powder, red pepper flakes, (BOOGRs) 1 teaspoon each, very delicious. Garlic and ginger root is the trilogy of Eastern cooking to flavor oil before stir frying. Onions, celery, carrots, or onions, bell peppers, carrots, is the trilogy of Western soups. Garlic is a global gourmet treat as is Provident Preppers. Love, great job.

I just peel it and chop it up. Then I put it on the trays and place it in the freeze dryer. Sometimes I like to roast the garlic and freeze dry it. You need a freeze dryer to do it.
