I'm so interested in the concept of the katsudon. The idea of putting the soggy egg mix on top of the crispy fried cutlet seems counterintuitive. It's obviously insanely popular but I haven't been able to realize its greatness in my own experiments with it. It feels like putting something good on top of something great - then neither one shines. I wish I could eat a dish from the pros here in the U.S.
For Katsudon, the aim isn't to retain crispiness. The fried coating becomes an additional ingredient to absorb the flavors of the broth, with the fried cutlet also contributing richness to the broth. The simmering process combines the flavors of the cutlet, egg, and broth. This is also similar to the practice of using bread to soak up soup and sauces.
Worth noting that Asians simply have different expectations on taste and texture and we can likely never appreciate it in the same way without having grown up there. And that's okay.

Yeah, this sort of cleanliness, quality, and friendliness is very Japanese. You couldnt find a single restaurant of this quality in whole Africa.

It is a special menu, but there is also a way to put pork cutlet and egg separately. Please come to Japan and try it!

力いれないで、練ってゆくってさすが。熟練の技ですね。かつ丼ながらく、いっしょになべで煮込んでましたが、卵アンを後からかけるのですね。そうしないとパン粉がねっちょりしちゃうからか。納得です。そのかわり豚肉にしっかり塩コショウですね。
