Pumpkin Leather
Preheat oven to 350
Clean out pumpkin
Bake for 1 hr.
Decrease oven to 250
Slice pumpkin (now soft) into thin pieces.
Bake for 2-3 more hours at 250. Or until desired texture
Pupkin Spice Cookies
1 1/3 cup oat flour
1 cup tapioca flour
2/3 cup coconut flour
2 tsp baking powder
2 tsp cinnamon
1/2 tsp ginger
Pinch of allspice
3 tbsp coconut oil
1 egg
1 cup pumpkin
Preheat oven to 350
Combine all dry ingredients
Slowly add wet ingredients
Add water until desired texture (about 1 cup)
Roll dough and cut desired shapes
Bake for 30 minutes at 350
Let cookies cool in oven in order to become crunchy
Apple Crunch Pupcakes
2 cups water
1/4 cup unsweetened apple sauce
1 egg
4 tbsp honey
4 cups whole wheat flour
1 tbsp baking powder
1 cup chopped apples
Preheat oven to 350
Mix all wet ingredients together
Slowly combine flour and baking powder
Fold in apples
Spoon into a muffin tin and bake for 30-35 minutes
You can add quite a bit to the muffin tin, as these do not rise and expand a lot

For the pumpkin jerky, you can leave it in the oven longer on low heat until it reaches the desired texture.
Gotta love how Bella, once a very stand-offish kitty, is now hangin' with the boys. Full member of the pack. She just doesn't like to be in the crush of things when Cooper's doin' Crazy.

I love Cooper's enthusiasm for everything that his parents plan for him and Koda. His zest for life is infectious. Koda is adorable too but just loves to chill out. What a pair, never a dull moment.
