A few years back, I fell in love with a giant pumpkin in a patch. It was massive. Come November, I sliced that baby up and roasted it, there was no way it'd fit in the oven whole. Took several batches. My favorite was always pumpkin bread, a classic. It'd be a good entry point into the pumpkin series.
Also, DO NOT USE CARVING PUMKINS, THEY TASTE AWFUL. Use sweet pumpkins or pie pumpkins for cooking/baking. Different types of pumpkins were bred for different uses.

U can divide the contents of the freezer bags WHILE IN THE CLOSED BAG for ez recipe portions! After an hour (1.5-2 if they're really full), check to see if they're frozen but not solid...like u can push a finger and it moves but holds that shape. Take out the bags and using a chopstick or wooden spoon handle to push into the purée thru the bag making 2 portions or a cross for 4, # for 9 etc. Finish freezing tip solid then snap off what u need. If what your freezing holds its shape to start like ground meat or Tom paste u can press w/o par-freezing but otherwise freezing halfway 1st is great for purees, soups, chili, stews, etc.
I am so glad that pumkin is sold year round now (frozen) . We use it to make a sudanese meat stew like food , it is my favorite since my childhood .Frozen pumkin allows me to make my stew even in winter here in Canada .

Stir until just mixed and no more. Do not over mix this. If you want to add other things like nuts, raisins, chocolate chip, or something. You can add up to a cup and a half worth. However if you add these things your bake time will be shorter. Bake in oven for anywhere from 30 Minutes to an hour. To test, stick a butter knife in the center and it should come out clean. If anything sticks, it's not done

I think you need be using smaller pumpkins as these large pumpkins are not that good. There are a lot of Indian pumpkin recipes like dumroot or pumpkin halwa which is a sweet dish. You can make stews and side dishes. But definitely try dumroot recipe, you will love it. Need a bit practice though.

There’s this really really yummy Chinese pumpkin snack that I get at the late night bbq , it’s pretty much breaded patties of pumpkin purée with some mochi flour I think and it’s soooooo delicious ! ❤
For a first time I recommend cleaning out a small pie pumpkin, putting the top back on, and throwing it in the microwave on the potato setting. It's that easy. Today I ate a mini white pumpkin stuffed with thanksgiving stuffing, but this was the first time eating a mini pumpkin. The stuffing was made in a pot on the stove separately and I stuffed it while both were still hot. So it was basically an edible vessel for the stuffing. Tasted like Fresh Roasted CHESTNUTS and I'm definitely doing this again. The meat turned into puree and I was eating it strait from the shell with a spoon. I was enjoying the pure pumpkin more than the stuffing. Imagine sitting at the table on Thanksgiving and there's a beautiful white mini pumpkin full of stuffing on your plate. You only need to use a blender to break it up when you cook a carving pumpkin because they're bred to be tougher. They also give a lot less food for their size because they're so empty inside. Eating pumpkins are a LOT heavier and taste much richer, but tossing them in the trash is still wasting a ton of very good food. If you don't eat it, donate it to a zoo. The animals love them.
@@Chrispy0 XD It was so tiny I just didn't feel like cranking up the oven for it. Normally I put them in the oven and I wouldn't nuke anything bigger than a small pie pumpkin. If someone's never messed with pumpkins before and not much good with the oven I recommend the potato setting. Which works great for me because I have memory troubles and don't want to forget something is in the oven. I can get easily distracted and wander out of range of an alarm. :( One year we were doing a huge carving pumpkin, but it was so big we had to leave the lid off. So while the body was in the oven we threw the top in the microwave. Tons of food, but yeah, carving pumpkins need the blender and seasoning. Still good for bulking up a stew.

My favourite pumpkin soup is actually butternut squash. Chuck a medium one in the oven on highfor 2 hours. Take it out and let cool. Then dice an onion, fry in butter and olive oil, add in the flesh from the pumpkin. Put 1-2 tspn of Keens Curry Powder (or whatever god awful equivalent you would use for devilled eggs - it shouldn't be called curry powder but it's awesome in this). Add in 1/2 to 1 tspn nutmeg, and enough chicken stock to get the consistency you like. Blitz with emulsion blender and add salt and pepper to taste. Let cool slightly and add cream. Unsolicited recipe attack.
Make sure you actually use pumpkins grown for eating. The large pumpkins we usually think of and are used for Halloween and such are just for decor and don't taste like much.

What's really good is taking a pumpkin and putting the ingredients for making a beef stew inside the pumpkin and then cooking it when it's done as you take out the beef stew you also scoop out parts of the pumpkin with it tastes great

I make pumpkin bread every year since it is dairy free. 2 dairy intolerant people in my family. I use near twice the recipe of spices, and 1.5 times the recipe of sugar. But, in the past, I cook my pumpkin down with the spices and sugar then canned it for later use in pumpkin bread. Now...I do NOT change the quick bread recipe when I use the pre spiced, sweetened pumpkin mix. The best nut free bread ever. No banana, nothing to change the flavor.
The traditional recipe is from Fannie Farmer. 1.5 C flour (219g) 1 C sugar (200) 1/2 tsp salt 1 tsp baking soda COMBINE these dry ingredients with a wire whisk. 1/2 C vegetable oil (1 dl) 1 C pumpkin puree (1/4 liter) 2 beaten eggs 1/4 tsp nutmeg 1/4 tsp cinnamon 1/4 tsp allspice Combine these ingredients well. Add dry ingredients. Stir until smooth. Preheat oven at 350°F. Pour into buttered or greased loaf pan. I line with parchment paper sometimes. Bake 50-60 minutes until long pick comes out clean, or sides pull away from the pan. Cool on wire rack. Rotate every 10 minutes. Nuts are listed in this recipe, but I NEVER add them. This is my version, based on the Fannie Farmer recipe. Their recipe adds 1/4 C water to the liquid ingredients. I usually forget to add that.🤣 Let me know how you like it.
Yes, that is a probably a carving pumpkin and isn’t known for being eaten, but they actually can be eaten and used for food. Just cause it doesn’t taste as good as another pumpkin, doesn’t mean it shouldn’t be eaten. Zucchini doesn’t exactly taste great on its own, but with seasoning it become pretty good- many vegetables are like this

If you use a big pumpkin, you can use cheesecloth to strain off excess liquid.
Here in Brazil we love to eat something called QUIBEBE. It is a pumpkin pure with fried onions and shereded corn.

Put 1-2 tspn of Keens Curry Powder (or whatever god awful equivalent you would use for devilled eggs - it shouldn't be called curry powder but it's awesome in this). Add in 1/2 to 1 tspn nutmeg, and enough chicken stock to get the consistency you like. Blitz with emulsion blender and add salt and pepper to taste. Let cool slightly and add cream. Unsolicited recipe attack.

Make sure you actually use pumpkins grown for eating. The large pumpkins we usually think of and are used for Halloween and such are just for decor and don't taste like much.

What's really good is taking a pumpkin and putting the ingredients for making a beef stew inside the pumpkin and then cooking it when it's done as you take out the beef stew you also scoop out parts of the pumpkin with it tastes great

Sufficient to form dough... We make small balls.. N roll it... to make puri... And then we fry it deep in oil.. Or ghee...

I make pumpkin bread every year since it is dairy free. 2 dairy intolerant people in my family.
I use near twice the recipe of spices, and 1.5 times the recipe of sugar. But, in the past, I cook my pumpkin down with the spices and sugar then canned it for later use in pumpkin bread. Now...I do NOT change the quick bread recipe when I use the pre spiced, sweetened pumpkin mix. The best nut free bread ever.

The traditional recipe is from Fannie Farmer.
1.5 C flour (219g)
1 C sugar (200)
1/2 tsp salt
1 tsp baking soda
COMBINE these dry ingredients with a wire whisk.
1/2 C vegetable oil (1 dl)
1 C pumpkin puree (1/4 liter)
2 beaten eggs
1/4 tsp nutmeg
1/4 tsp cinnamon
1/4 tsp allspice
Combine these ingredients well.
Add dry ingredients. Stir until smooth.
Preheat oven at 350°F.
Pour into buttered or greased loaf pan. I line with parchment paper sometimes. Bake 50-60 minutes until long pick comes out clean, or sides pull away from the pan.
Cool on wire rack. Rotate every 10 minutes.
Nuts are listed in this recipe, but I NEVER add them.
This is my version, based on the Fannie Farmer recipe. Their recipe adds 1/4 C water to the liquid ingredients. I usually forget to add that.🤣

Yes, that is a probably a carving pumpkin and isn’t known for being eaten, but they actually can be eaten and used for food. Just cause it doesn’t taste as good as another pumpkin, doesn’t mean it shouldn’t be eaten. Zucchini doesn’t exactly taste great on its own, but with seasoning it become pretty good- many vegetables are like this
