Rocky road might be synonymous with ice cream in the United States, but, in Australia and Britain, it’s a fudgelike candy made by stirring any assortment of marshmallows, dried fruit and nuts into melted chocolate. Sohla El-Waylly’s recipe relies on the subtle aroma of speculoos cookies, spice drops and pumpkin pie spice to evoke the holidays. Or use it as a guide to utilize leftovers from gingerbread house decorating: Swap the cookies for broken gingerbread and the marshmallows and gumdrops for any chewy candy.

There's something so endearing about the way Sohla goes "WHOA!" as she suggests substitutions, it's like she's even surprised herself at how good her idea sounds. Too adorable.

such a small thing, but i love the way sohla says this recipe can be done by kids on their own, and addresses them directly. this recipe is written For Kids or people who otherwise dont have access to an oven or stovetop, and i really appreciate that

I have to confess, I usually tune out at "no bake-" but come on, it's Sohla
I would use tahini and use those really hard sesame-honey-wafers as the crunchy element. With walnuts and dried cherries or cranberries or maybe mango.

I love making tiffin every Christmas, I use dark chocolate, cranberries, ginger nut biscuits, pistachios ... I may try using tahini in my mix this year! Loved it!

Pumpkin spice is a big holiday trend in the US right now. Spiced chocolate has been popular longer, but it's become even more so with the pumpkin spice popularity. Personally, I prefer chocolate in my spices rather than spices in my chocolate.

I remember having rocky road for the first time in 2006, it blew my mind! It was a Nigella Lawson recipe that a friend made. Chocolate is melted with butter and golden syrup. Amazing. I will make this one though because I love Biscoff and I need a dairy free recipe next weekend. Great timing, thanks!

Another idea: peanut butter, peanuts, oreos, marshmallows, white chocolate swirl on top

@@roxannejoncas Nice! Someone else in these comments said pistachio butter has become popular, so I looked it up and I think there is a brand I could at least order. Probably not available in my stores yet.

Did not realise rocky road wasn’t well known in the US. I would not think of it as a cookie/biscuit but it is pretty great.
Who told you it wasn't well known in the US? It's just more common in ice cream than a chocolate bar, but we have that too.

This seems like the American version of my favourite holiday candy: Wunderspeck. It's also melted chocolate combined with rum and filled with raisins, nuts and other festive crumbs you like. There is a thin layer of waffle on the top and the bottom. So delicious!

I'd never realised that specific combo was iconically Australian - but I love it. Our Darrell Lea classic bar is so good. My friend makes an amazing GF version and it's AMAZING.

A family friend would always give us a cookie box that included these except it was basically just chocolate and rainbow marshmallows and it was my favorite cookie!! Literally looked forward to it every year 😂 Can’t wait to make these
