Caramelized French Toast
Serves 4
Special Equipment: Griddle
4 large eggs
2 large egg yolks
½ cup whole milk
½ cup heavy cream
1 teaspoon vanilla extract
Pinch of ground cinnamon
Generous pinch of salt, plus more for serving
4 one-inch-thick slices challah bread, toasted until golden brown all over, cooled
2 tablespoons unsalted butter, divided
4 tablespoons granulated sugar, divided

I absolutely love French toast and this looks like heaven to me.
I made these this morning and I can confirm they are DELICIOUS. I think I’ll make French toast this way forever on. The crispy, sweet, brûlée sugar on top of the not-so-sweet French toast is incredible. My sugar topping held up and was still crispy after spiced whipped cream and blackberry maple syrup sat atop it for a bit. 10/10 would recommend. Thank you, Claire, for knocking it out of the park once again!

In Serbia (Europe), we make something like this for breakfast. We call it "prženice," which comes from the word "pržiti," meaning "to fry." It’s made with stale bread, eggs, milk, and a bit of salt. We usually eat it as a savory dish with white cheese or clotted cream, but some people enjoy it with fruit jam. :)

I remember my dad making French toast for my older brother (7 years older) when I was really little, like 4 or 5. I thought it was gross and wouldn't eat it 'cause I saw him put milk and eggs on bread. I would eat boiled or scrambled eggs, but I didn't have French toast until I was an adult. I ordered some from the restaurant my mom works for, and I finally understood what the fuss was all about. I love the channel, Claire, and i really love seeing the kitty cats!

I made these this morning and it was legitimately the best french toast I've ever had. Nice crunchy outside, with soft and smooth custardy inside. The only thing I changed was I used my lebkuchen soice blend. I will definitely use this as my go-to from now on

This is how i make french toast for my family, except i caramelize some banana slices w/ brown sugar and butter. So simple but looks and tastes super impressive.

Also ATK did the science on “stale” versus “dehydrated” - there is actually a difference between the two. Old versus dehydrated there is a carbohydrate structural difference. You can do both but they do result differently.

Made these today, and they are absolutely incredible. Challah is definitely the way to go, just sliced it and left it covered on the counter all night to make it stale.
I loooove challah french toast! My mom would always add a splash of orange juice to the egg/milk mixture - adds a little citrus note that makes it feel fancy!

If I'm cooking french toast for a large group, and want everyone to eat at the same time, I'll put the french toast in the oven, at the lowest temp, directly on the oven rack, so it's all nice and hot and served at the same time.
What a great method!! I've never seen this before but now I have to try it!
This is a great recipe with techniques to enhance. I can't wait to try it. The only challenge is making a lot at once, which requires cleaning up the griddle or cooking surface, which can slow subsequent batches.

Oh interesting! I have to try these. Over here in Romania, pain perdu is something everyone knows how to make - we just beat a few eggs with milk and honey and spices and dip the stale bread and then fry it in butter. Easy. The beauty of it is you can make it however you want and it always turns out kind of alright, but honey has always been an essential ingredient so this is very unusual

In Belgium we also have pain perdu, slices of stale bread dipped in beaten egg. My grandma used to add cinnamon and sugar, it was delicious-lic-ious yummy 🤤

Definitely going to make Creme Brulee french toast this weekend. I've got a version very similar to this, but the toppings are all placed on the bottom of a cooking dish, the bread is put in, then the batter. Everything is allowed to soak for a few days and baked in the oven.

Dear claire, FYI in Spain we eat a very similar version of french toast or pain perdu called Torrijas. It is a tipical desert of easter. delicious!!!

I achieve the same results but just putting butter in the pan, melting it, and then adding in some maple syrup and the french toast on top. it makes a sweeter caramel, almost dulce lecher type flavor. the onyl downside is its messy and you can burn it easily.
If you forget to stale your bread, a few minutes in a food dehydrator (or air fryer with a dehydrate mode) works well to dry it out.
I've been looking for a good caramelised sugar french toast recipe for a long time. This looks perfect!
In Spain we also have this recipe and we call it "torrijas", they are typical of Easter.

I do my own version, where i substitute white sugar with coconut sugar in my milk and egg mix, and substitute vanilla extract for almond extract. Its amazing! But now im wondering if i should caramelized my coconut sugar like you did instead!

I tried to do this myself last week by sprinkling the toast with demerara sugar during cooking. It didn't turn out exactly how I wanted; it ended up looking and tasting a little burnt. Now I can see how to do it right!
So her video helped? Hers look burned (not just brûléed) to me. But I haven't tried it yet.

I was used to eating it with a sugar cinnamon mix drizzelt above the fried french toast when served, i wonder when you caramalize it if you could use for that the cinnamon as well or if it would burn the spice?

I learned so many things I'm doing wrong with my French toast, I think I'll make this for Christmas morning breakfast. Also, I'm very glad for the pan recommendation. Husband and I moved to a different state and got rid of everything except for two pots. Would any other cooking surface work?

I didn't grow up eating frnch toast and found early versions attempted too runny or eggy in ways that ruined it but this looks great and so many great tips I might retry!

I KNOW this is a technique approach with the sugar. However, I would rather heat the cream enough which would alloww me to mix in the sugar for it to dissolve. Then add the cold milk and eggs and blend it.
This would more evenly and EASILY, provide a that sugary goodness throughout the French toast. Still providing a nice crust.
