    commenting after1 min into the video. actually i cant vouch entire India, but the part i am from we do strain water after rice is cooked. We make rice exactly like pasta. we soak rice after rinsing it( time may varie based on the grain sometimes small grain soaking not required), then add rice to the boiling water. Once cooked strain water. usually we dont use colander, there is a tilting technique usually we do, but definitely we dont put cold water after cooking rice, that will make rice watery.

    The same thing happened to my partner. His mother forced him to eat peas and now the only way he'll eat them is to smother them with tomato sace, worcestershire sauce, salt and pepper. He told everyone his mum was trying to poison him. Honestly, everyone has things they dislike so I don't know why parents and grandparents are so hell bent on forcing kids to eat things they don't like. Just let them have things they don't like. Tastes change over time so maybe one day they will like whatever it is. Or they might not. But let them decide for themselves.

    straining and washing rice after cooking it is a European standard The Brits do it the Dutch do it and the Germans do it and I used to do it, As a Dutch person I didn't know that any better because it was taught to me this way now I know better and my food is way better too because of it.
    also, European rice cooking usually uses a sh#tload of water.

    9:57 - "can't have new store with gas to cook, must be electric."
    Where does most of the electricy come from?
    COAL
    OIL
    But..."natural resources".
    If you think a 300 person restaurant can run their stoves, ovens, lights, equipment etc. is going to run on SOLAR, get ready to do two things
    1. Raw ingredient takeaway - like a food company like HelloFresh or MarleySpoon, but you have to pick it up and cook at home
    2. Go out of business
    Sit wown restaurants will be a thing of the past, except very high end (read: pay the city to oeprate, which is loansharking)
    Excatly waht THEY want
    And yet, an illegal alien can grill a cat on a shopping cart, and the police just walk on by, despite the illegality of the person, open air cooking without a permit, hygiene issues, and fire hazard.
    "but what do i know"

    • @Freya1412
      @Freya1412 ปีที่แล้ว +15

      Depends on the rice. Basmati is better to overload with water and drain when it's about 80% done then steam to remove excess water. Learned that from a South African Indian and it's so good. Perfect rice every time.

    • @nandkuj
      @nandkuj ปีที่แล้ว +10

      @@Freya1412 actually no, Basmati turns out way better by using the exact amount of water, it's quicker as well as you do not need the extra step of draining and then putting it back on the heat to dry out. I thought I knew good rice until I switched to absorbtion.

    There's a reason why fried rice caught on as a reaction theme: it's so simple. Like Uncle Roger says, the three ingredients are egg, fry, and rice. The fun comes from people trying to over-think it. It also clearly exposes when someone lacks very basic cooking skills and instincts. It's a well that never runs dry.

    • @edim108

      It's kinda like making eggs. It's dead simple, there is nothing to overthink, you either know how to fry an egg properly or you don't.

    PAR-boiling rice is very common in, especially India. I've actually switched over to this technique, because a 5 minute parboil removes about 80 of the arsenic in the rice (unavoidable, and a problem if you eat rice every day, like most Asians...) while keeping most of the nutrient content (and, presumably, the flavors). I finish the rice in my Zojirushi cooker though for the fluff.

    If I had to make a guess, next up is Gordon Ramsay. Will Paul do something against his nature and compliment a Brit? Or is it going to be the ramen video?

    Brian, I have a question:
    Is it really a rule of thumb if you're using your index finger?

    • @mst7724
      @mst7724 ปีที่แล้ว

      Not sure if this will help answer your question, but... yes I see index finger used all the time. Some of my elderly even suggest putting the hand (palm down on the rice) into the evenly leveled rice (with water already in). They said that if the water just barely cover the "upper part" of the hand, then that's enough water. If I don't see my hand anymore, then that's too much. Not sure how accurate this is, but my aunt does this in additional to the "index finger" method.

    Not all British people don't know how to cook rice. My father was Chinese and had a restaurant. We never ever strained rice wice water, hot or cold. Err... what??
    Seriously I laugh at how some UK people do this. Including my ex. I was horrified when I caught them using boiling water to finish the cooking process!!!
    Love the show and Chef Paul's comments .
    Unleash chef Paul!!

    Fyi, in the UK, standard plain egg fried rice from a takeaway is around £2.80 - £3.50. If you want meat in it, its around £5.50-£6.50

    This was definitely pretty terrible but still miles ahead of Kay's. Those goddamn peas though! I never put peas in my fried rice. That is like the worst ingredient to add.
