    Let me start by saying this Lemon Ginger Blueberry Cake doesn't pretend to be fancy. Not even a bit. That's right, we're using boxed lemon cake mix for two reasons: 1. It cuts down on ingredients and 2. It's saves on time and mess. Plus, I can assure you you're going to get one of the fluffiest, moistest cakes you've ever had, loaded with juicy blueberries that burst inside of it once pressure baked in your Instant Pot, keeping your kitchen cool. And when that iced glaze hits the cake at the end, cascading down the sides seeping into the cake itself? It's also an huge hit from my original orange cookbook.     This looks soooo good. If you use a silicone brush to paint the glaze on, it sets in layers as you work around the cake, becoming crispy and sealing the moisture in the cake. 😉 ❤

    Jeffery I now have all your Cookbooks got the other three during prime day .I have had the Orange one forever. Love it!!! I always make your banana bread in IP. but never realized this recipe was in there.I know what I'm making when I get home.

    This is the first dessert I’ve made in the instant pot and it was wonderful! Thanks for yet another great recipe.
    I’m definitely going to experiment with zhuzhing up other cake mixes in my pot!

    Just ordered the Bundt pan, sling, and your orange book! This lemon cake looks so wonderful I just could not resist! By the way, Jeffrey’s favorite chicken is known as Ricky‘s favorite chicken at our house. My husband requests it every week. 😊

    I made this 2 weeks ago and it was a HIT! Switched things up this week and used strawberries instead. Even bigger HIT!!! Definitely a keeper

    I bought the amazing sling ( thank you). I bought silicone bundt pans. Hope that is ok. First time i made this, yesterday, all the fresh berries sunk. I did not mix in. I am going to make again for my bro. Im going to reserve 1/4 cup of the dry cake mix and mix with the berries today and see if that helps. Cake doesnt have enough lemon flavor for me so im definately using zest and add at least tablespoon of juice in batter and take out a tablespoon of gingerbeer. Thanks for the inspo.😅

    Just made this from your orange book that I bought last year but was apprehensive about making a cake. I tried an instant pot cake before (from a different site) and it was a fail. After watching this video I decided to give it a try. It’s delicious and just as you described! Will definitely be making it again!

    Omg!!! That looks so yummy!!! I was wondering if you could use a combination of frozen berries and just let them thaw first. Would it change the texture of the cake and make it mushy?

    Was just thinking the other day I needed some IP cake recipes and up pops your latest video. I won't use cake mixes (too many artificial chemicals in them) but I'm sure I can simply make my own. Two things I need to get is a bundt tin and one of the silicon slings. Been meaning to get these for a while but just haven't got round to it yet. I love lemons and blueberries so will definitely be giving this one a go - with modifications.

      @@walterlewis1029 I've ordered one as I'm going to be making jam shortly among other things. I've got the basket that Jeff uses to make his Swedish meatballs (they're lovely) which is really useful too, plus pot-in-pot inserts I use several times a week. Love my IP.

      @@Pythonaria Have you made the meatloaf yet with the potatoes at the same time.Pot in pot method.I put the whole potatoes on sling first the meatloaf in the small IP pot with cover. When done I remove the meatloaf remove cover from small IP pot add tomato sauce and remove the sling and mash the potatoes and whip the potatoes.

      @@walterlewis1029 It's a really nice meatloaf. I did mine slightly different. The meatloaf went in the bottom P&P, the peeled potatoes in the top, sprinkled with salt and added a cup of water. There's only myself and my adult son now (my husband passed away in 2011) so we don't use many potatoes. Haven't made meatloaf for a while so you've given me an idea for later this week.
      I first saw the IP on another channel - a British one called Sorted Food. Ben, who is a professional chef reviewed it and was impressed. At the time my Prestige pressure cooker, the seals had gone and I was having difficulty finding new ones. Decided I wanted the IP. Amazon at the time were out of stock so I had to wait a couple of months. It came back in and I said to my son I really wanted one. He asked me if I would use it. Answer was "Of course", so as it was coming up for Mother's Day here he bought it for me. Best Mother's Day gift I've ever been given.
      Looking for inspiration, I found Jeff's channel and it's been my go-to ever since. I've never had a failure with any of Jeff's recipes (and I make my own too).
      One of our favourites is Jeff's Garlic and Lemon prawns. Quick and easy meal. We have that every week. I do the rice first in one of the P&Ps then while I make the sauce, keep it warm in the oven (80C so bacteria can't grow). I prep up everything while the rice is cooking as you have to work quickly with it. Meal on the table in under 40 minutes from start to finish.
      I made chicken curry last night so we're having the rest tonight. Rice and sauce done in the P&Ps. Great time and energy saver.

    something i learned, its often not the eggs they are worried about its the flour. Raw Flour is dirty and they assume everyone will cook their flour so noone mentions it but then you get sick eating raw dough and think its from the egg but it was more likely from the flour

    Dont simply put the berries on top like in the video. They will not sink in the batter and all the blueberries will be at the bottom of the cake. Mix them in THEN pour into the cake mold.

      Take a look at how the cake looks when it’s sliced at the end. Looks perfect. That’s because I didn’t mix it in.

      @@PressureLuck did this 3 times.. all the same results.. berries all lumped at the bottom.. I mixed it and that worked fine for me.

    Unfortunately this did not turn out well. It was way overcooked and the blueberries never bled through the cake. They were a mushy mess. Had to throw out the entire cake. I followed the recipe exactly.

      The same one you have. I made the topping already so I may buy the cake mix again and try it on the bake option. Should I lower the cook time and mix the blueberries in the batter? I have the Instant Pot Pro model.
