I've been using pumpkin seeds in my pesto for many years. My son is allergic to nuts so I sub either pumpkin, sunflower or hemp seeds all the time. It doesn't really change the flavor.
I made it tonight and it was delicious! I love the tip about using raw sunflower seeds instead of pine nuts. I remember having sticker shock the first time I bought pine nuts. I really like your recipes and your cookbooks, I can not wait for the new one!

I am planning on doubling the pesto sauce recipe, but do I also double the garlic broth too - a total of 8 cups of broth? Instead of, or in addition to, basil and pine nuts, you can use kale and pistachios or walnuts. I buy the bags of pre-washed kale and the pesto comes out really good. After all, the word "pesto" means crushed or pounded, not the actual ingredients: "The name Pesto originates from the Genovese word pesto, which means to pound or to crush. This refers to the way in which the authentic sauce is prepared, with a mortar and pestle."
I love your videos and books. While I realize that fresh basil would be preferred, we dry much of our herb garden. So, if I wanted to substitute dried basil how much would I use?

Have you ever tried putting in your liquid, hitting saute, and then adding your pasta unbroken? Then pressure cook. How do you think it would affect the pressure cooking time?
Hey I love your videos but I just wish he cut to the chase. Too many people on TH-cam cut their videos back. Also I’m not so sure about that shrimp being cooked personally I think I’d cook it and then throw it in
If you love my videos that means you should also love what I have to say. I feel I do cut to the chase and provide more detailed instructions to make sure you don’t fail. That’s my style and I’m sticking to it. ;)

Thanks for loving me and getting the books but I wouldn’t call making meals that are simple and quick “lazy”. I released a chicken and rice dish just last week. We are in a recession and I intended to help people with budget meals in the coming months. There will always be something for everyone here.

Never thought about using sunflower seeds in pesto. I traditionally use walnuts. Love it!

I have never had pesto but I love the idea to add shrimp. I have some frozen already cooked shrimp that i could just add in at the end.

Jeffrey has a recipe for making garlic broth in his second cookbook (I think), or you could use Better Than Bouillon Garlic.

You can use toasted for sure. It’ll just give it a bit of a different flavor profile. I’d also make sure they were too salted.
