First time making it tonight. It was amazing. I popped one in instant pot 40min NPR and the other in oven 350F for abt 45 mins ( i never baked so i just kinda guess it). They both turned out delicious. Oven one looked darker and little harder on top.

I just made this cake and it is wonderful! Since I only have one instant pot, I divided the recipe in half using a scale to weigh the cake mix and jello pudding mix. Since 3 eggs are hard to divide, I used 1 whole egg and an additional egg white. I couldn't find the pineapple cake mix, so I used a yellow cake mix. Someday I may run across the pineapple cake mix and use it, but till then, I am very happy with how wonderful it tastes with the yellow mix. Thanks for the recipe and demo!

Those look fabulous! A box cake mix plus a box of pudding has been my standby cake mix for many years. Kinda looks like an Easter ham! I once made steamed Christmas pudding and the instant pot would make it much easier. Thanks for sharing! 🌻

I put wax paper sprayed with PAM in my Stainless Steel pan, than layered it.....everything else is the same. Just in case of sticking. Very very moist and good...the Istant pudding makes a good difference. I used all Pineapple juice instead of any water in the Cake batter recipe. Super Good recipe
Had a day off yesterday, all the ingredients and my stackable pots arrived soooooo....perfect timing! Made the Pineapple Upside Down Cakes yesterday. They came out beautiful and amazingly delicious. I only had light brown sugar on hand though. I don't know if it made a difference in the taste, but I'll have to pick up a bag of dark brown for next time. Thanks for this incredible IP recipe.
One thing that also works very well is to replace the pineapple rings with crushed pineapple. While it doesn't have the same look in the end, you get a better spread of the pineapple and it tends to cut easier for cutting. Also, while you might be tempted to do so, do not use fresh pineapple for this type of cake. The canned pineapple has a texture shift when the cans are sealed due to a high heat pressure system that means that using fresh pineapple for someone who is used to this type of cake always tends to view the taste and texture as slightly off...
I used the same recipe but used Peaches, with a some cinnamon & nutmeg this time. Just as great as the Pineapple when it came out. So go ahead and try different things. Easy & Great recipe !!
Yum. Ok to just melt the butter in the pan and then sprinkle the brown sugar over that. Add cherries and walnuts too if you like, then top with the cake batter. The butter and sugar will turn into a glaze while baking.

The are cooked on high pressure with water to achieve pressure. I've recently cooked a giant pancake in the liner on low pressure using no water. It came out beautifully, moist and delicious. Q: Can I cook a box cake in the liner, like the pancake, using low pressure? If so, for how long? Thanks.

And trust me, with 4 children between 1 1/2 and 8 years old, 2 being special needs, that is a miracle!! We live in Nova Scotia, Canada and unfortunately can't get the brand pineapple cake mix in this video or any other kind unfortunately. Do you have a suggestion for a substitute? I soooo want to make this for my family! Also I don't have the Instapot brand pressure cooker, I have a 8qt Insignia one that unfortunately doesn't always work correctly, and also doesn't have the "pressure cook" button on it. Hey Carol! Because they aren't in an oven and cooking through a pot-in-pot method via pressurized steam, the cake takes a little longer BUT the end result is just beyond your wildest dreams!
I have a pressure cooker but I don’t have an opinion for cake. What option can I use? I only have stew/soup, rice, steak, chicken, sear, steam and slow cook.
Could you not use both pans in the same pot by putting the first pan covered with the solid top on the trivet, then placing a second trivet or something similar to raise the second pan covered with foil, off of the first pan? By raising the second, you create a space through which the steam can pass thereby cooking your upper pan from all sides.
Yes I have 2 instant pots too 🤪 My excuse is the high pressure never worked right on the first one I had a third instant pot that I took to the partners house. Oh and a 4th instant pot air fryer that I bought for my brother and his family.

HEY I noticed something 'odd' bout this video. when you were putting the cakes together, your center pineapple was first one down, and the other 4, were placed around it, but the other 4 were on TOP OF THE CENTER ONE, but now, the center one is on top????? I have one recipe for a similar upside down cake, but I never use pre made cake mixes. I do cakes with flour, sugar, eggs baking powder....anyway, i have never done cakes in my IP. I still have my old LUX IP, with no cake menu. I wonder if I can do an upside down cake in my Lux 6qt IP.
How long can one store the batter in the fridge? I made 1 cake but like you said it is enough for 2, so I put the 2nd one in the fridge - its been about 10 days now.. Does it go bad?

I made this and did the 40 Min 40 min NPR and it wasn"t quite done. I did an extra 10 minutes and it came out perfect. So moist and delish !!
