This episode really shows more than ever just how passionate Ben is about food and being a chef. We can all see it anyway but today but the way he was so visibly thrown of his guard (considering he usually never missed a beat) by having his food judged by not just a 1 but a 2 MS Chef. That reaction is one of somebody who is deeply connected to their craft. Well done both Chefs. I would have been shaking two if i had a master of my field looking at my work, especially if i didn't know until id finished it!
I totally feel for Ben! Many years ago I was working as a sous chef in a high end hotel. I was putting the final touches on a seven course tasting menu for two that the chef had asked for for a VIP, when from out of the chef's office walks the chef, and Anthony Frikken Bourdain!! (turns out they were school chums and Bourdain was in town for some conference...this was before all the TV stuff really took off, back when he was 'just' a famous chef) I damn near sliced by thumb off I was so surprised (was putting the finishing touches on the amuse bouche). I was completely starstruck and just sort of stammered out what an honour it was to meet him. Later, we were cleaning up for the night and he came down to compliment me on the food...one of the proudest moments of my cheffing career.
@Taps fan Thanks! It's one of those moments that has always stuck with me. I was devastated when I found out he died, especially *how* he died. His TV persona was very unlike how he was in person...sorta like I'm given to understand Gordon Ramsey is. He was jokey (*VERY* funny, in a 'dry wit/snark' sort of way), gave me a couple tips, and even signed my copy of his book (which is still one of my most prized possessions). He was a giant in the industry and a truly amazing human being, and I miss him.

Barry & Jamie rescuing the potato skins from being tossed in the bin, their gleeful, self-congratulation over their appetizer ("we might win this battle") ...and the careful sake pairing! 😂 This series has given me a totally new perpective on sake...it's good with more than just sushi, and worth further exploration. I have 2 bottles of alcohol I've spent more than a hundred dollars on, one a bottle of Mcallans and one was a pretty amazing bottle of Sake. And yeah Sake can go with anything and some pretty good bottles out there aren't even that expensive, though availability might depend on location.
Why do you have to be a culinary student to understand that? Haha. I think we all get it - even us plebeians who aren’t culinary students but are just fans of cooking and food. Such an odd thing to think that only culinary students can recognise how spot on it is. Sorry if I’m missing something.
I think he hasn't eaten a lot of Fusion food before so he didn't quite understand the dish as much as most people. Not that'd take much away as he's a 2 star chef.

Thierry Pasteur honestly even his “American” shows still portray that he’s a very sweet guy and just has a gruff exterior. I can’t say I’ve ever seen him on a show and thought “wow this guy doesn’t mean well at all and is just an asshole.”

As soon as James sees Chef Ishii, you can tell on his face "12:13" that he knows he is in big trouble with his dish being judged by a Japenese chef. It is so far out of Japenese cooking. This was such a great battle guys! I love this sake series. Before this, I never gave sake much thought but I'm very curious to look into different styles of sake and appreciate them in the same way I would with wine or beer.

I've been waiting for this all week and you guys didn't disappoint. I love watching the chef vs chef battles as it's interesting to see the different ways James and Ben cook. In this battle, I do think Ben was a worthy winner as his dish looked amazing and I am a massive pasta lover haha. Also, Ben and James' faces when the chef came in oh my goodness I had to pause the video as I was laughing so much. It was in that moment when they regretted everything they had done in the battle 😂😂

I'm always happy when Ben wins. It was amazing seeing how the chefs put their own spin on Asian fusion and super cute with how excited everyone was to see the guest judge 😊
Curveball Ideas: Use only one hand to do everything for the amount of time chosen. Switch meals and follow the other person's recipe for the amount of time chosen. Everything in the fridge/oven/on the stove needs to be taken out/off for the amount of time chosen. Plate your dishes blindfolded. Plate someone else's dish. Add one random ingredient chosen by Ben or James and incorporate it into your dish. (If possible) Turn off the lights for the amount of time chosen and cook in the dark. You can do one minor sabotage to dish of your choice. Cannot choose the same dish as someone else or your own. These are just a few of the ideas I had. I love the challenge videos, keep 'em coming!
I love all the "battle" videos! Chef v. Chef - fascinating to watch Ben and James at work and compare their different styles and approaches, and love their presentations. But Mike v. Barry v. Jamie are fun to watch - so many comedic moments, but I also learn a ton as I see the 'normals' at work...sometimes I learn how NOT to do it! 😅

Wow everything looked amazing! I think we got to see every side to Ben there was in this video and I am so glad of it. When the curveball was thrown to him and he got Jamie to work with, it really showed how great of a teacher he is and the high five really knocked it out of the ball park for me. It’s also great to know that I can absolutely relate to Ben when faced with the chef at Umu and how shaky he was around him. I hate the feeling but knowing somebody, Ben especially, has the same reaction.. I think I can feel more at ease about it. Thank you!

Curveball Ideas:
Use only one hand to do everything for the amount of time chosen.
Switch meals and follow the other person's recipe for the amount of time chosen.
Everything in the fridge/oven/on the stove needs to be taken out/off for the amount of time chosen.
Plate your dishes blindfolded.
Plate someone else's dish.
Add one random ingredient chosen by Ben or James and incorporate it into your dish.
(If possible) Turn off the lights for the amount of time chosen and cook in the dark.
You can do one minor sabotage to dish of your choice. Cannot choose the same dish as someone else or your own.
These are just a few of the ideas I had. I love the challenge videos, keep 'em coming!

Great ideas to ruin the food/video. A5e you really into watching a blank screen for a random amount of time? Can't film in the dark.
I agree cooking in the dark wouldn't be good but maybe cooking by candlelight or under like black light with a bunch of glowsticks and neon

Chef v. Chef - fascinating to watch Ben and James at work and compare their different styles and approaches, and love their presentations.
But Mike v. Barry v. Jamie are fun to watch - so many comedic moments, but I also learn a ton as I see the 'normals' at work...sometimes I learn how NOT to do it! 😅

Wow everything looked amazing! I think we got to see every side to Ben there was in this video and I am so glad of it. When the curveball was thrown to him and he got Jamie to work with, it really showed how great of a teacher he is and the high five really knocked it out of the ball park for me. It’s also great to know that I can absolutely relate to Ben when faced with the chef at Umu and how shaky he was around him. I hate the feeling but knowing somebody, Ben especially, has the same reaction.. I think I can feel more at ease about it. Thank you!
