    For home cooks: Avoid followng an Escoffier to a tee. For example when making broth, many home cooks have got the idea that bones are essential and go out of their way to get them. But Escoffier's recipe just listed bones cause all resturants had them as free left-overs. In fact, cheap cuts of meat often give more flavour. So you could settle for that if you don't have any bones already.

      @op3129 I was as shocked as Ben to see the bacon. I immediately started reading about mirepoix, hoping a literal translation would help me understand the matter.
      Nope. Mirepoix is thought to be the last name of a chef who -- maybe -- popularized the combo's use.
      Putting aside all the regional variations of which veggies are used, it seems there's mirepoix au gras and mirepoix maigre -- the first with meat. The second is what we commonly think of as mirepoix.
      Who would think a few diced veggies could get so complicated?

      I think they explained that neither of them actually uses a pressure cooker on a regular basis, so it probably slipped out of their minds.

      Generally I’m pretty open to food, but tongue, I really can’t get behind it. Similar to tripe I can’t do that either. Anything else I’m pretty open to though

      @@hmaz7637 most professional kitchens don't exactly need pressure cookers, we generally have the time and resources available to get everything done well before a service comes, so there's no need for the added time/people using one in the middle of a huge rush becomes a liability when they need to open it and forget the safety precautions.
      It's generally more for home cooks who don't have 8+ hours to wait around for certain meals, or for big cooking competitions where they need to make something from scratch, but only have so much time.

      Etymology of 69 is (In the sexual sense), from 1888, as a translation of French faire soixante neuf, literally "to do 69." So called from the similarity of positions to the arrangement of the numerals.

    Video idea: who knows me best-ish. Someone for example Barry is the first person, he picks out the ingredients and makes a dish. However long he takes is the time the others get, they are all presented with Barry's ingredients + a few extra. They all get the allocated time to make what they think Barry will have made with the ingredients. At the end they all see all of the dishes, whoever is closest to what Barry made (taste, appearance etc) wins. It could be a 5 part series with each one of them being the first on an episode.
