I used to watch Alvin way back when he was doing stuff with Tasty or whoever/whatever. He was my favorite. Him being added to the BCU is absolute gold. Oh, and we make bacon with our cabbage all the time down in the south lol. Add in some diced onions, butter, and a little dash of sugar and then some chicken broth to simmer, reduce and soften up
I grew up with this both on my dad's side with him growing up as a Kansas farmboy in the '50s and '60s, and on my mom's side having learned it from her German grandmother. It kind of combined in my house growing up, so it was usually bacon fried off, then cabbage cooked in the bacon grease (maybe with some shredded carrots, too), along with butter, salt and pepper, and a bit of caraway and sage.
Watching everyone grab some food to go at the end always reminds me of having a "family meal" at several restaurants that I worked at in the past. I miss those days.
for years I thought Anthony Bourdain ate an "ekiben" during a train ride in Japan on 'A Cook's Tour', the predecessor to No Reservations but he was actually eating a "kishaben", which you can buy ON the train. seeing Alvin talk about and eat an ekiben just made me think of Anthony Bourdain. I miss that guy RIP.
I love Alvin giving us the leftovers, and his job was done with the fried rice and then he CONTINUED?! Excellent. TBH I would watch "Leftovers with Alvin" or "After Thoughts with Alvin" as its own thing.

Why are you pounding it across the grain (from the top) instead of from the cut side? You compress the muscle fibers when you "tenderize" it your way; pounding it on the cut side would give a better product.
The color on the takuan is entirely dependent on the way it was prepared. If done traditionally, it'll get to that color from the sun drying process that goes on before the pickling. If it wasn't sundried then they usually add cardamom or other yellowing natural food coloring into the brine.
Apart from the fact that the lunch box is too big, this is almost the same as the tonkatsu bento from "Your Name." The bento in the story is called an ekiben, which is for eating on trains and is designed to be tasty even when cold. I used the leftover sauce to make fried rice and twice-cooked pork, but in reality you would use a commercially available bottled sauce so you wouldn't have any left over. Makes me want to have tonkatsu for lunch tomorrow.
We use pickled radish in making Kimbap - and it’s yellow because of the turmeric that’s used in the pickling process. Pretty cool and I love the flavor of pickled radish! 5:37

If the katsu sauce seems too daunting to make at home, you can make a super simple version of 1Tbsp Ketchup, 2.5 tsp Worcestershire, 1.5 tsp oyster sauce, and 1 1/8 tsp sugar, whisking to combine. That's what I use when making baked chicken katsu
