    INGREDIENTS
    -----------------------
    (Makes 6 large cookies or 12 small ones)
    120g almond flour (or any nut/seed flour of your choice)
    ½ teaspoon baking soda
    3 tablespoons nut butter 120g (peanut, hazelnut, macadamia nut butter all work really well)
    2-3 tablespoons erythritol (or any sweetener of your choice. Adjust the amount accordingly)
    Dark chocolate (in a block or chips)
    Chocolate version (on top of the ingredients above)
    3-4 tablespoon raw cacao powder
    DIRECTIONS
    ---------------------
    Cut the dark chocolate in chocolate chip sizes if you use the whole block.
    To make the base cookie dough. Place almond flour, baking soda and the sweetener (if you’re using liquid sweetener add it in the next step) in a mixing bowl. Give it a quick mix. Add in the nut butter and mix/knead all ingredients in the bowl together till it forms a soft dough. Fold in the dark chocolate pieces so they are evenly distributed.
    Divide the cookie dough in 6-12 equal portions. Roll each portion into ball shape and place them on a lined baking tray. Use your fingers and press each ball flat to the desired thickness. Dot a few more pieces of chocolate on top of each cookie dough.
    Bake the dough in a 170-180°C/325-350°F preheated oven for 12-15 minutes. Check the cookies at around the 12 minute mark and see if they need further baking time. If the cookies are browning at the edges and look set they are ready to come out of the oven.
    Leave the cookies to cool to room temperature.

    I was following your recipes and i lost so much weight and became so healthy but i got sick 4 years ago and started taking certain medications that raised my weight so much. I am still on these meds. I am hoping i recover soon and start following your diet again. Thank you for the great recipes.

    These are going to be my weekend treat. A couple of cookies with a nice cup of tea. I will tailor it a little and add Brazil nuts and Medjool dates as together ground taste like toffee (didn’t believe it until I ate them both together, not any dates but Medjool dates) and for the sugar probably use date sugar. All experimental to see how it turns out.

    I made this cookies a couple of hours ago and are amazing! My dough was very dry, not like your one but pressing it well, it was holding the shape. I think probably it was because of the peanut butter (I used the Lidl 100% roasted peanuts) Thank you so much! Are delicious 🤍

    Whenever I make Keto cookies (usually peanutbutter cookies) i eat too many and it kicks me out of keto. lol Also most alcohol sugars are not healthy and erythitol doesnt have long term studies done on it yet but if the other sugar alcohols have anything to say, well.. there ya go.
    And the body stops producing ketones when it has to metabolise sugar alcohols just like it does with regular alcohol. So you'll still get a keto hit with these cookies. I like to use stevia. Some people will still get a keto hit with stevia too, because its so sweet so the body thinks it ate sugar and spikes insulin anyway- at least until your body gets used to stevia not actually having sugar.

    okay. I'm eating a choc cookie as I type. Delicious, easy, just like you said. I can't wait to take one to work - for lunch- my first batch I wrote the recipe as, 3 Tbs butter, not nut butter... still works and yum! 2nd Batch, for the nut butter I used almond... I'm in heaven.. thank you Fan

    FYI: I've been a baker for over 30 years so I know that when you bake on a dark pan, what you bake tends to bake dark.

    "..they'll last up to two weeks." Not in this house they won't 😂😂😂 The only sweetener I use is maple syrup, how much do you reckon I'd need to use?

    This looks so yummy! Just wondering about the amount of nut butter; it says 3 tbsp / 120g - but I think 3 tbsp is around 45g?

    Is there anything else besides nut butter that I can substitute. I'm not a fan of nut butters in my cookies. Love your channel and have made quite a few of your recipies.

      I don't generally track the macro. It depends on the flour and the nut butter you use. Have a check on your package it should be very easy to work out.

    American organic almond flour and peanut butter did not work with this recipe; it produced a crumbly mess, not a cookie. I think this recipe is missing an ingredient. So, I remade the recipe, adding one slightly beaten egg white at room temperature, and it worked.

      The trick is to use the hands to warm up the nut butter. It will come together. Or you could add a couple of teaspoons of coconut oil to speed it up.

    I used 3 tablespoons of Nutzo nut butter and the dough was too crumbly so I added about 1/4 cup of jiffy creamy peanut butter but it was still way too crumbly. Idk how much nut butter you added but apparently mine wasn’t enough.

      Allulose and maybe gelatin, but allulose tends to brown faster

      I doubled the peanut butter and added some liquid allulose. They're in the oven now, so I'll let you know how they turn out.

      I'd highly recommend getting a kitchen scale because it makes everything more precise. But with this recipe, it's slightly over a cup.
