Taiwanese Beef Noodle

5 to 6 pounds of beef shank
Spices
------------
2 tablespoons oil
1 onion, thick sliced
1 knob of ginger sliced
8 cloves of garlic
4 star anise
1 piece rock sugar
8 dried red peppers,
4 green onions in chunks
4 tomatoes quartered
Soup
-------
10 to 12 cups water
2 tablespoons chu hou paste
2 tablespoons chili bean paste
1/2 cup dark soy sauce
1/2 cup light soy sauce
1/2 cup rice wine or Chinese wine
2 tablespoons oyster sauce
3 bay leaves
couple of orange peels
salt and pepper
2 bundles of thick round noodle
4 bok choy quartered
4 green onions sliced

Soup is simmering but had to add more water due to saltiness, great recipe but next time I will reduce light soy and dark soy to 1/4 cups

the noodle used is totally different from typical Taiwanese beef noodle.....
I agree, is the more flatter round wheat noodle, however I like this noodle more as I like the chewy texture. Thank you for dropping by 😊!
Is it normal to leave the silver skin on?
