70+ Year Old Portuguese influenced Restaurant + Goan Sausage (Choris) + Curtorim Street Food Tour

In today's episode of Goan food series, we along with our hosts Raul and Mac from Local Beat, are exploring an iconic eatery in Margao, then visiting Utorda to witness the making of Goa's famous sausage called Choris and at last undertaking a short street food tour across Curtorim market.
The first stop is a legendary place that started in 1950 and since then it has evolved into a favourite place for Goan classics. Here we tried bombay duck balchao, prawn papad, sausage pulao, bolo san rival and perad. The food was great and so was the ambience that attracts people over and over again. Raul, Mac and owner Ivo Almeida Coutinho's company and stories made the experience really special.
Next we paid a quick visit to Margao's New Market and then headed over to Utorda. Maliva and Mingel were ready with the mise en place required for the making of choris. The process involves great experience and expertise. With years of practice, Maliva made it look like an easy task. In due course of the conversation we got to learn about the nitty gritties of a perfect choris. Once she was done the sausage garland was hung over embers to get it smoked. She then asembled a choris pao and served it with rose tea. We loved the spicy and piquant flavours that was balanced out by the bread.
From there we went to Curtorim, Raul's hometown, for a quick street food tour. The first eatery at Curtorim market was Win's Kitchen. Their chicken cutlet pao was juicy and flavourful. The second stop was Jacks. Here Raul tried some beef soup which was light and decent. Third stop was Vasudev Ros Omelette stall. The chicken gravy was almost over since it was late. So we tried little of the gravy with a half fried egg. It was indeed delicious. The penultimate stop was Angelo's chicken point. Here we munched on some crispy chicken which was essentially cornflakes coated crisp fried chicken. The last stop was Bar Alegre. Our food terminated here with some Urrak, a traditional alcoholic drink.
Rahul and Mac's knowledge about the Goa made this trip memorable. So

As I have commented before, Mr Sapra is creating a benchmark for food blogging. Actually it would be unfair to limit him as a food blogger, as his work well beyond the boundaries of food. His people skills, empathy and sense of humour are really to be appreciated. Its an excellent window into incredible Indian culture and food, especially the bits that no one talks about. Longuinhos was my dad's favourite restaurant whenever he would come back from the ship. Everyday he would ship at Margao and come with their beef and chicken pattice

There's a huge Brazilian contribution to Goan cuisine through the Portuguese which isn't well documented nor popularly known to the world.
I also came to know recently a certain breed if cows was gifted by India to Brazil years ago and it is very popular in that country.

Only downside is the audio quality was not upto the mark.You could have filtered tha background sound in the initial cafeteria scene and provide another microphone to the accompanying people.

yes !! it is raw meat that is dried and smoked. you have to simply boil it in water for about 5 mins.
Choriso is well prepared to be eaten... Depends which u buy... Sukhi Or voli.... Just fry iit on pan wigtout oil or boil it
