Aside from the washer head screws which are obviously different, the pair of screws you remove from 6:12 to 6:18 are shorter than the rest and basically the only two you have to keep track of. The problem is, they will work anywhere, however, placing the longer screws into their spots will punch holes through the face of the fuselage. It isn't a disaster if this happens, since the holes are covered by the chest plate and can only be seen if you push the chest plate all the way up. If you trade in junker Jetfires long enough, you will definitely see those holes! Oh, and since the one you are working on in the video is an earlier release, you have a tiny modified screw holding in the front landing gear spring (and holding down the canopy), so I guess you'll want to keep track of that one, too; in later releases, that screw is replaced with a washer head.
