Adding liquid to roux in small amounts is more likely to create lumps than just dumping most of it in all at once. If tater soup is a bit thin, a bit of instant potato flakes will do wonders.
Steaming is the only way I cook potatoes now. Faster, less waste, with no worries about over or under cooking. Dice and add to soup. Sometimes make wedges from the steamed spuds and drop them into a deep fry for a couple minutes or slice and shallow fry for cottage fries.

(Unless my inside garbage is about full enough to get taken out to the main dumpster, in that case I'm not really too worried about tossing it in without the extra bag) There's just nothing worse than a garbage smelling of decomposing food, onions and garlic especially!!

In the cold temperatures & winter, you can place the vegetables parts in the ground to compost especially the garden. It will make your soil healthier. Pretty Baby Girl.

You can use any onions but whites and yellows have more water content and cook up sweeter. For me, my stomach can't tolerate the reds.
