A teaspoon of mustard in any form - powder, paste or oil and half a teaspoon of garam masala would take your recipe to the next level. For novices, don’t overdo the smoking bit! Not more than five minutes should be fine or you will end up with a bitter taste.

Couple of questions if I may? 1) Would ghee work in place of veg oil when marinading? 2) when leaving the marinade to set into the chicken, does it make a difference if this is done at room temp, or in a fridge? 3)Finally, I often see this dish complimented with a tikka sauce for additional dipping. Would this just be standard tikka masala sauce, or is it likely to be leftover marinade refined into a tandoori sauce?

I love chicken tandoori.. I had the authentic ones in Jeddah SA, but in my country, Malaysia, they had modified it so much that there is no taste anymore except spiciness... I'm going to try these...
We do t get that type of coal in Canada so I do t have a recipe using it. But if you have the right coal then all you need to do it heat up the coal red hot, put it in a heat proof bowl, place the bowl in the middle of the dish with the food and then pour some melted ghee in it and cover it up with a lid and allow the smoke to flavour the food.
