    10 years on, and this is still the only method I follow. The little details such as cutting the tendon cords, only here. God Bless you always Chef Harpal.

    Thanks! Lovely recipe which I've used few times on my regular oven. I've now got the Tandoori gas oven & will try tomorrow. Did you add water at the base of the tandoori oven?

    I love this guy. He has probably eaten Tandoori chicken countless more times than the average human, yet the juicy tender chicken pulled from the gas oven and the familiar tandoori aroma still gets him excited.

    Chef, I love your Tandoor oven. Though I don't have it , I cook my Tandoori in convection oven and to give a smoky flavor I broil it for about 7-8 minutes.

      They are ok. 20 mins to do chicken tikka. I turned them after 10 mins. As you put 300ml of water in the bottom of the tandoor you get no smoke at all.

    Tried the recipe in a non stick kadhai and it was absolutely amazing! At the end, just turned it over the open gas flame to get the smoky flavour - yum! The best tandoori recipe i have tried!

    Chef Harpal, Love your videos, just found them about a week ago. I am not Indian but trying to learn to cook in the traditional Indian fashion...and getting pretty good at it. Your videos are both fascinating and easy to follow. Thank you for sharing your knowledge and experience with us. I am now more inspired to try new dishes and spices. The Indian markets in my city are one of my favorite places, as soon as I walk in, the aromas and spices call out to me, now I'm getting to know more about them. Please if you can, post a short video or videos explaining which spices and ingredients go best together and which to avoid mixing.     I made this and this is the best marination ever taste so good just one question the gravy marination taste so good and don’t want throw it away lol so it’s so good can u also use that as gravy to if you pour over the chicken while cooking it will it be ok ? if you don’t want to dry tandoori chicken

    Greek yogurt is a good substitute for western cooks. That's what I use. It needs to be dry and thick.

    1 chicken pieces - 800 gmsFirst Marinade:1 tsp Kashmiri chilli powder
    ½ tsp salt
    1 tsp garlic paste
    1 tsp ginger paste
    1½ tbsp lime juice/ half of lemon
    Marinate for 15-30 mins.Second Marinade:1 cup yogurt (preferably hung yogurt or Greek yogurt)
    1½ tsp garlic paste
    1½ tsp ginger paste
    1 tsp Kashmiri chilli powder
    ½ tsp garam masala powder
    ½ tsp salt
    ½ tsp black salt
    2 TBSP Filtered mustard oil
    Mix chicken with Second Marinade and keep for one - two hours.
    Preheat tandoor for 5-7 mins and keep chicken.
    Heat chicken for 15-18 mins.
    Brush chicken with butter or oil.
    Heat chicken for 5 more mins.
    Brush chicken with little butter.
    Sprinkle ½ tsp of chat masala.

    I just made this recipe tonight. Cooked it on the grill on top of foil. It turned out great. I added kasoori methi and used fresh grated ginger and garlic.
    Will definitely make again!

      using a sharp knife like that. silly pple may try to do the same n cut themselves. But as usual, a great recipe chef. i do wish u had mentioned how to cook it in oven too, esp. mw oven (in convection mode+ temp/time) and after that if grill mode is required too? that would have been a great help chef. lots luv from a huge fan. I met u in bombay several yrs ago at yr cookery demos at inorbit mall. More power to u!

    Hung yogurt is also known as Labneh, for anyone wondering. I used a labneh sold by Sierra Nevada cheese company and sold as Creme Kefir. Cooked this in the oven (that wonderful tandoor is not an option for me as I have a electric stove) and the broiler for color at the end and came out great.

    I'm all the way in Guyana, South America. I've had Tandoori chicken before in another country. I want to cook Tandoori chicken for my family but i'm not sure of getting all the ingredients over here, is it possible to use other ingredients? I absolutely love this particular tandoori chicken and would like to make it a home made special for my family...

      actually...the red colour is made from a bug called cochineal (not sure about the spelling), although it may be a bit gross it is completely natural and completely safe.

      I qould expect it to be more purple rather than red. The taste won't differuch though
