    INGREDIENTS:
    800 grams skinless whole chicken legs
    1st Marination:
    1/2 tsp Kashmir chili powder
    1 tbsp lemon
    2 tsp ginger garlic paste
    1/2 tsp of salt
    Marinate from 30 mins upto overnight.
    2nd Marination:
    1/3 cup Hung curd/ yoghurt. To make hung yogurt take plain yoghurt and put on a strainer for 30 mins. This will drain the extra moisture.
    1 tbsp Kashmir red chili powder (can replace 50% with paprika)
    2 tsp coriander powder
    1/2 tsp cumin powder
    1/4 tsp garam masala
    1 tsp roasted dried fenugreek leaves
    Salt to taste
    1 tbsp mayonnaise (optional)
    1 tsp chickpea flour (optional).
    Dipping sauce/Chutney:
    1/2 cup fresh Coriander
    1/4 cup fresh Mint
    1 small/med Garlic clove
    1 tbsp lemon juice
    1 Green chili
    1/2 cup Yoghurt
    Salt to taste

    3:32 I hate it when TH-cam "teachers" say "salt to taste." You know the amount that you used for 4 chicken thighs (1 kg?), so weigh it out and say it.
    In the end, salt is a % of the weight of the main ingredient. It is so in bread making. So you'll know how to scale it up or down depending on the weight of flour. It is the same principle when cooking food. There is nothing secret or magical about weight of salt for a recipe.
    Popular spice mixes (e.g. spice shakers that you just sprinkle on chicken, fish or red meat) contain as much as 50% salt by weight. Then they charge you a lot of money when salt is the cheapest ingredient.
