Beautiful arroz con habichuelas rosadas! My Recalto looks like your sofrito and the sofrito I had was red. My nieces and sis cook with sofrito that is green like yours. I am about to cook piccadillo with white rice in honor of my niece who prepared it for me when I went home to visit. My other niece made my fave - arroz con gandules. I can make these but schedule does not permit it sometimes. I also make arroz guisado con habichuelas negros. Thanks for your recipe and demonstration. YW

I am a total fan girl of yours!!! I've always had an interest to make authentic puerto rican food bc it reminds me of my childhood with my puerto rican neighbors (the inner white girl in me can't resist all the delicious smells that came in from next door around dinner time while I ate my unseasoned chicken breast & broccoli). I follow several of your recipes and I seriously think it has made me a better cook. All these basic ass "chefs & cooks" use measurements and you're more of an eyeballer ha ha. I always had a hard time following "exact" directions so I found it to a task to cook. However, I came across your videos and I realized I can use my basic judgement/ intuition and voila!!!! Cooking has since been a lot more fun, & most importantly easy!! So, thank you mama!!!!

I cooked this and it was amazing. Everyone who ate it loved this recepie and it was very good as left overs too! The only thing is, I bought a seasoned 10 minute yellow rice and it came out a bit salty but I washed the seasoning out of the rice too. It would be wonderful to know what kinda yellow rice. But other then that your recipe is on point and makes a wonderful mean!
If the seasoned yellow rice you bought came in a slender yellow bag with the white center, just follow their instructions, no need to rinse that rice. Add the amount of water they specify and cook, they did everything else for you. I love that yellow rice, but if you want a little more seasoning add a half teaspoon of minced garlic or a tablespoon of the Sofrito and a can of rinsed and drained Goya red kidney beans. = Bomb Rice.
Must of bought the VIRGO Yellow Rice Package, Iv'e use them before, As they have a lot of Salty & other Chemicals in it as well, Better off with making your own Rice etc.

It comes out great. When you add the rice make sure to not cover it. Let it boil away then stir. (itll be wettish) Cover it for 15-40 mins. The times depends on how much u put in but make sure it doesn't burn. and then when u uncover it stir it and if its not wettish anymore ur good to go. but even if it were itll dry off by the time ur ready to eat it.

there are many sofrito recipes on youtube. the traditional PR style is called "Recaito" and I personally prefer the sweets and beyond channel's recipe. she has a recipe for a large batch and a small batch (the small batch is still pretty big). I stay away from recipes that include spanish olives, salt, pepper or oil in it. I prefer to only use the vegetables (onion, garlic, peppers, culantro, cilanto) because you can then do whatever you want from there with the seasonings and oil. good luck!

Best trick for the water is put the spoon in the middle of the rice if it falls over u used too much water. If it stands ur good

I rinse it since the flavor is really strong with the rice. D: but i still leave some in, i just throw the chunks away~
