    If you stuff it it becomes a Gordita. If you eat it as is it’s a Pupusa. Multi cultural goodness. Your cooking / teaching methods are very easy to follow. You always leave me hungry.

    Hi I just wanted to say how thankful I am that I came across your channel. My wife's new work schedule has push me to step up and help with cooking and house chores. The things I've tried my family really loves not all of them come out as good looking as yours but it has definitely helped having some one that explains everything so well. I'm not much for following directions but you make it so easy to want to try. My tortillas are almost as good as yours look! Just wanted to make sure you know you're helping people, I know the internet and people that follow TH-camrs can be quick to discourage or criticize or just not say a simple THANK YOU! k

    I freaking love you. I just got making 70 tamales by myself....i was like omg i am never making them again! And then everyone loved them and jokingly asked if i was hispanic. Huge compliment so you k ow I gotta make em again! Being able to freeze the masa is so nice. I can do it freeze it. Do my sauces another day and freeze. Do my meat another day and then the next day assemble. I will be able to make larger quantaties with less frustration and ill be doing this recipe tonight!

    Perfect cheese and masa cakes! They look delicious! Complete meal with a bowl of frijoles de la olla. I have missed your videos, yes trying to show your house to sell is all about keeping everything nice and tidy. Good luck! On your new adventure. Let us know if you sell and upgrade! How exciting! Right now the homes in Calif. are selling at a high price. Buying and selling is all relative.

    I just made these with mild cheddar. I'm going to put these at the bottom of a pile of Mexican rice with beans and tamales. Thanks for the recipe I ran out of husks and didn't want to throw out my leftover masa. Thanks again for posting.

    A few days ago, I made tamales like the ones from one of your videos (with my own family's adjustments, of course), and I had more masa than meat this time. I usually have a lot of meat leftover.
    I'm so glad you posted this! I have the masa in my freezer, just waiting for this opportunity. 😆

    I made tamales yesterday and had leftover masa. Bought some jalapeno Jack cheese. OMG only had three what I'll call gluten free grilled cheese. Delicious!

    I made tamales yesterday, and I didn't finish the dough. I was worried about freezing it (thanks for that!) and wasn't sure how tho use the rest of the dough (thanks for that as well!) I can't wait to try these. I have a ton of cojita cheese to play with.

    Great Idea for left over masa. I do struggle once its out of the freezer, it crumbles alot. I thought it was just me. You make it look easy. Keep up the GREAT job. 👍

    Oh those look so yummy! In my area (KY) we would call these fritters, I think. I know what my hubby would do with them, lol. He would smother them with salsa and devour them. Love your channel!

    I BEEN MIA, just got back 2 wk. Camping. And trying to finish up the last of the GARDENING with the last of the Canning /Dehydrating, with meats / veges. and also pressure Canned different Varieties and Soups, and Stews, Chicken Pot Pie Base, etc.. So glad the Harvesting and Canning are almost done. Today I did Hm. Made Chicken Soup, Canned 24 half pints of Celery and Dehydrated some too. And Dehydrated my Carrots and Bell Peppers. Then lastly I made 2 Suffed Bell Proper Freezer Meals.
    Before you know it will be time for Tamales***
    I watched your Tutorail with your Mother and Loved All* the Varieties you Shared. I want to try making some of your ideas.
    I wonder do you like making Sweet Tamales? Again THANK YOU SO MUCH .
    I HAVE NEVER MADE Pupusas* . I WILL CHECK THEM OUT.

    I have extra prepared masa that I dreaded having to sit down and fill all afternoon and bust out the pressure steamer just to make a meat tamale, its so good to see something to just grab and create a pairing with it like it was a sliced bread. Kinda reminds me of a corn hashbrown puck that can have a filling. I'll try this out.

      Gochujang Mamá if people wanted a “healthy” recipe they can always search for one. I don’t think yours is that unhealthy. You provide your family with home cooked meals, that’s more than what most parents provide. Keep cooking! I love your videos. 😬

    Looks good! But I gotta be honest...during the whole video I felt super nervous. I was afraid to look...I just knew you were about to melt that bowl or catch the paper plate or the newspaper on fire by having it sit so close to the griddle. 🙈 Glad to see that I was wrong! 🤭😬🤓😇 Think I will try this tonight when my tamales are finished.     What would you pair this with and if you were to "sauce-it-up", what sauce would you advise? (i.e. enchilada sauce, sauce from Chili Colorado 😋 )

    A very long time ago, I had both left over masa and husks. I mixed in some shredded cheddar cheese, a bit of sugar, and some creamed corn into the masa. I then spread that onto the husks and steamed them with the tamales, with fingers crossed. They actually worked out well, and I had about a dozen made. I got one while my kids fought over the others. 😆😆😂🤣🤣

    What can I replace the lard with? I love tamales but the lady I use to buy them from used some oil but I have no idea what oil it was

      You can use any oil that isn't too flavorful. Maybe a neutral oil like vegetable, grape seed or even avocado oil works. 😁
