  • Aloo paratha is one our favourite dishes from Calcutta, found in so many of the Punjabi dhabas, where they are served with lots of love and butter alongside achar and dahi (creamy yoghurt). Aloo paratha is a type of stuffed Indian flatbread, that is quick and easy to make, and is very filling. When made at home the calories in a paratha can be kept under 400 kcal (our recipe has 385 kcal) which is very reasonable for a full-sized lunch or dinner. Aloo paratha, or as a Bengali would call it, alu porota, is also an excellent recipe for tiffin or lunchbox for kids, or adults, or for carrying during travel. Aloo paratha, being very dry, keeps well for a long time, and for this reason it is an integral part of the menu during Indian train journeys, where a whole family can be seen devouring stacks of paratha with achar. Parathas or parottas form a very important part of the cuisine of South Asia, including Pakistan, India and Bangladesh.

    I have made it a rule now. Every night b4 I sleep one video of urs... My new relaxing therapy u c... This goes right to my breakfast plate tomorrow morning... I m in love with the cast iron pan u guys r using.... Even though these r known recipes... I still watch them because the tips that u guys share actually makes wonders while cooking. I almost felt like gobbling up the paratha when it puffed up so well completely like a Puri... Ahhh... It's love a 1st sight for any paratha lover. And b4 I end this comment... This music of na na na na..... Uff kills it and that Durga puja dhaki and kansor ghonta beat.. Ahhh nothing can be more ideal.

      it could be because your paratha dough was not soft enough, for paratha dough must be softer than roti dough

      ya..chicken curry,simple masur dal,masur dal with tamato n curry leaves,fried egg plant n today in breakfast I made this aalo paratha..actually my family also loves bengali food.everyday I came up with a new bengali dish..they all became happy having bengali food everyday n I will keep on trying new recipes..thanks alot bongseat..

    I am from Bihar and my mom cooks exactly the same way with same ingredients...we call it aalo bhari roti... Amazed to see this on TH-cam 😊 No wonder geographical proximity (Bihar-Bengal) plays an important role in the evolution of cuisine..

I mean we can survive with aalo shiddho/aalo choka with rice and even fermented rice with pickle.. And then another version of full fledged preparation with variety of ingredients...       i believe paranthas came from Punjab but over time came to be incorporated into every indian cuisine. You will find different versions of paranthas/porotas in each household north, south, east and west of India. Perhaps only the north-east was saved from the onslaught of the paranthas(!) as it remained inaccessible back in the days.

    Great cooking style but we Punjabis do not put oil before we cook paratha. we cook the paratha dry on high heat then desi ghee on both sides and low the heat cook it further till its crisp and golden. putting oil on raw paratha usually makes the paratha rubbery but not crispy in my opinion....

      Right. My mother does it that way and it works perfectly. But in our experience this yields softer parathas that stay soft longer. One could go both ways I guess.

    Redirected from fantastic video of making soft rotis, I couldn't stop myself to see this video, as how can somebody resist mouth watering 😍😍😍😋😋😋aaloo parantha. Seen so many videos of making parantha but this video of yours gave me such an excitement and happiness 😍😍 I can't write in words. It's a feeling beyond the words. The way you represented removing the curry leaves, cutting onions , so beautiful macro videography , the first push of fork to smash potato (awesome video shooting ) , and then that delicate filling of potatoes into the dough and then delicately closing that dough , man o man , so much hard work you put on direction of videos (it seems cooking will be rather easy than your video shooting and editing).Then the final part cooking the parantha and lovely turning it . At the the end of video I was thrilled and was imagining that it is served before me when you people put yoghurt, achaar , and finally took a piece out of it . Hats off to your team (Especially the cook and video casting , editing , direction guys ) .
    Forgot to inculde that lovely music, I am not getting the words but that awesome soothful voice and music and this lovely video present the cooking to another level. Even those hate to cook will start loving it 😍😍.
    Kudos to all of you . Subscribed your channel after seeing only two videos , the first roti one (it was extremely beautiful , even no words for that one )
    P.S. - As far as I have read somewhere that yoghurt and achar combination can be poisonous , so I think it will be better to ensure in future the compatibility of foods , otherwise by seeing and fascinated by your lovely videos people might play with their health

    Hi! Your recipes are great! But could you please write the measurement in tsp/tbsp/cups as well? Sometimes it gives a hard time to understand since people like me are no t used to of it.

      Lol the measurements are given in weights exactly for the reason of removing any confusion. Cups can different for different people.

    Everytime i put all this filling in my parathas, all the filling comes out 😓
    What should i do?

      Knead the dough as soft as you possibly can. Then it will not “burst” ... the filling and the dough should be in harmony when you roll it out. When rolling it out - you should give very light pressure only and if needed put some dry flour so that it does not stick to the base on which you are rolling out the parathas.
      It will take a little more time - but the effort will totally be worth it.

    why hot water? why not cold water? if I use hot water in parata it will become so soft and it won't be crispy....

      True. But for a paratha with filling you want it to be soft and not flaky. For flaky parathas such as lachha paratha you should use cold or chilled water.
