The Perfect Spicy Alur Tarkari for Kochuri-Spicy Bengali Potato Curry

- This spicy kochuri'r alu'r tarkari (as our friends will testify) is our secret recipe that we have guarded with our life for eight years. We arrived at it through various permutations and combinations in 2010, and since then have been making this at every luchi-aloo torkari party for loved ones. After two years of running this channel, we are finally revealing this to our viewers with a mixture of reluctance and joy. Please use this recipe responsibly.
Of course this alur tarkari is not our invention. However, there are no real recipes that we have found anywhere on the internet or in recipe books.
It is the quintessential mishtir dokaner alu'r torkari that is made in sweet shops, as well as Bihari Kochuri shops in Bengal, and served with either hinger kochuri, or luchi, or puri along with a lonka'r achaar (green chilli pickle) and a sweet chutney. Every shop makes it a little differently, but the basics are the same.
Growing up, my favourite kochuri shop was this trio of shops in Sealdah market called Shuruchi, Mukhoruchi and Abhiruchi. Thousands of people everyday consumed huge wicker baskets full of hot hing kochuri served in shaal patar'r thonga (cones made from dried shaal leaves), topped with a ladle full of steaming hot spicy alu'r torkari. Another firm favourite is Maharani (actually Maharaja, but everyone we know calls it Maharani even though there is a shop actually called Maharani just down the road) on Lansdowne. If you go early in the morning you will find morning walkers gorging on kochuri alur torkari, followed by hot sweet pantua or jilipi and finally a big earthen cup of tea.

This made me tear up. I am from Jamshedpur (or Tata as we Bengalis fondly call it). One of my fondest childhood memories is waking up to the sound of hawkers selling luchi aloo dom at Kharagpur station on our winter vacation trips to Kolkata and insist my parents to buy us some despite there being packed shosha sandwich breakfasts that my poor mother had packed for the trip. If her feelings were ever hurt, we didn't know because she enjoyed the oily moshladar plate of luchi aloo dom as much as we did. Oh, the nostalgia! I can literally smell the dish as I am typing this. Thanks for sharing!
I am also Bengali from jamshedpur, I am born there n brought up there in telco. Jameshpur is always close to my heart, the streets our telco colony n the kharangajhar market, cannot forget. I am a proud BONG and my dad loves potatoes. But staying in southern part of India we have always missed that real BONG food. My dad always use to crave for authentic kolkata Street alu'r torkari and kochuri but finally I was the one who prepared for him from your recipe authentic kolkata Street alu'r torkari and kochuri and he was literally amazed to have kochuri and alu'r torkari. I have served like typical kolkata Street style in a leaf boul. I took all the credit from my dad for all this because I have not shared with him till now that I have learned all this from your channel and I am very SORRY about it. I do have to book my tickets to Calcutta... Making a list of the dishes I want to eat... I remember my dad used to get us kochuri and aloo torkari from this shop near the park circus market.... We used to stay there ages ago when the circular Road did not have the bridge.... On either side you would have huge trees that made a beautiful canopy.. This was our breakfast special during Sundays right after coming back from church..... Cannot say how much I miss Calcutta....
A lot has changed, infrastructure wise.. But I'm sure the food will still be nostalgic.

i personally like boiled potatoes hand crushed slighty.... which also thickens the gravy a little . gravy has to be slurppy but not too thin
Yes, every shop has its own style, but the basics are the same. We make it with boiled potato too sometimes, specially when making in large quantities-but for smaller quantities this method is easier and requires less cleaning and washing. It also tastes a little better because the alu absorbs more of the salt and masala.

আমি বরাহনগরের মেয়ে । ওখানকার সবচেয়ে পুরানো কচুরির দোকান " মুখোরুচি " । কাশিপুর উদ্দানবাটি তে থাকাকালীন স্বয়ং রামকৃষ্নদেব ওখানে কচুরি খেতেন ।আহা্ কি স্বাদ্ । এখন অবশ্য ওসব অতিত । কচুরির মান ও পড়ে গেছে ।
বাহঃ! একবার খেয়ে দেখতেই হবে তাহলে।

কারণ একটা আছে আগে , কচুরি ভাজা হতো বনস্পতি দিয়ে র এখন ভাজা হয় palm oil দিয়ে ,কোথাও বা সোয়াবিন তেল. তো আগের মত সেই গন্ধ র আসা না করাই ভালো. র ভালো বনস্পতি এখন কোনো কোম্পানি তৈরি করে না.
