I just found your videos and made both the hibachi chicken and vegetables and they were fantastic! I have tried so many times to make variations of both and have always wound up with watery mushy veggies and chicken. I will use these techniques in so many other cooking applications too, especially doing the mushrooms so they don't come out watery and steamed! Do you have printed "recipes" that explain these methods that I could print? Either way, I will be turning to you for all my cooking tips from now on! Thank you!!

Just found you and am binging videos. Question: how long would you hold the seared cutlets in the fridge for? With the method showcased it should be possible to prep several pounds of chicken on a day with more time (ie weekends) and then just finish the dish quickly with a variety of sauces and veg on days with less time (ie weekdays).
I tried last night and failed. Stove knob was at 5.5 and I cooked for more like 4-5 min on each side. I would not recommend doing what I did. I'm going to try exactly 3min today and see if my results are different but my chicken was dry and stringy, not like how this vid portrays. I hope I could help others with this.

You'll have to modulate for whatever stovetop you're on. Sounds like you overcooked the chicken.
