How to make- Hibachi style fried rice at home

  • I show you how easy it is to make hibachi style fried rice.
    Background: I started working as a hibachi chef when I was 16 at my dads restaurant here in Athens, Ga. Since then I have worked in a handful of different restaurants, cooking hibachi, mastering sushi, and even making pizza!

    Ingredients:
    2 cups of dry long grain rice
    1 cup diced onion
    1 cup frozen peas and carrots
    3 large cloves of garlic
    1/2 cup sliced green onion
    3 Tbsp canola oil
    1 tsp salt
    1 tsp pepper
    2 Tbsp butter
    3-4 Tbsp brewed soy sauce

    if you need a print able recipe for this:
    Hibachi Style fried rice
    Ingredients:
    2 cups of dry long grain rice
    1 cup diced yellow onion
    1 cup frozen peas and carrots
    3 large cloves of garlic
    1/2 cup sliced green onion (7-8 stalks)
    3 & 1/2 Tbsp canola oil
    1 tsp salt
    1 tsp pepper
    2 Tbsp butter
    3-4 Tbsp japanese brewed soy sauce (use more soy sauce)
    Put rice in bowl then Wash it out until clear
    Equal parts rice and water then cook the rice
    When done cooking break up the rice then let cool overnight in fridge
    (Next day/12-24 hours after)
    Dice up 1 cup of onion
    Slice ½ cup of green onion (7-8 stalks)
    Remove garlic skins and cut off root ends then mince thin (rough)
    Put the yellow onion and the frozen peas and carrots in a bowl and mix together
    Prepare three eggs in a bowl and mix
    Grab canola oil, butter, soy sauce, salt, & pepper and put to side
    Large skillet medium-high heat, put 2 tbsp of canola oil in & scramble eggs
    After eggs are mostly scrambled push to one side of pan
    ½ tbsp of oil with garlic and lightly saute
    2 tbsp of butter over the garlic and add the peas, carrots, & yellow onion
    And mix together
    Add teaspoon of salt and teaspoon of pepper
    Add rice to the top and and tbsp of canola oil
    Mix everything together heat everything all the way through
    Turn temperature up a little( not sure how high )
    Add soy sauce around the edge (3-4 tbsp - add more to taste)and the green onions
    And mix until soy sauce looks fully incorporated
    you can verify everything but i made sure i did it correctly and added a few notes that helped me

    The end result looks amazing I just have trouble trusting you if you don’t use the finger measurement for your rice. Tbh of the 3 fried rice videos I’ve watched this is probably the method and general ingredients that I will go with.

    Can I use botan calrose rice instead of long grain rice ?

      Yes you can, it will definitely be a little bit stickier though. I recommend long grain for fried rice, but if you can’t find it then that will work just fine. Thank you for watching!

      That all depends on how much you eat I guess. I could eat this in 2 meals, but you could probably make it into 3 or 4 especially if you’re adding meat to it. I hope that helps, thanks for watching!

      You can, but it will change the flavor quite a bit. If you are wanting a healthier alternative that won’t change the flavor I would recommend avocado oil. Thanks for watching!

      This is because he washes the rice, so during the wash, the rice is soaking in water. If you are not washing your rice, do the amount on the bag of rice, imo.

      Lol, my dad taught me the hand measurement which is what I usually do. But for the sake of consistency and to make it easier for people to read as a recipe I just use the 1:1 method. Thank you, so much for watching!

    Too big a recipe for that size pan. Uncle Roger is screaming in agony somewhere. But that’s not necessarily a bad thing. This closely resembles my technique, but cut the amount of onion considerably, and cook the whites of the green onion in the oil with the garlic, and don’t add the greens until the end, as garnish.

      Real Hibachi restaurants are originally Japanese owned. We don’t typically add MSG to anything except for what is naturally derived from foods like kombu (sea kelp). Don’t get me wrong I love Chinese food, and uncle Roger, but there is a big difference in the 2 cuisines. Anyway, thank you for watching!
