    焖饭[mèn fàn] is a type of rice meal in which you cook the rice with abundant ingredients all at once. I call it the lazy recipe. Once you learn, it will change your life because it is easy to make; there are no limitations on the ingredients, and everybody loves it. I normally use an instant pot to make this recipe, but a rice cooker or a regular stock pot will also work.
    INGREDIENTS
    2 tbsp of oil
    1 shallot, minced
    3-4 cloves of garlic, minced
    1/2 inch of ginger, minced
    2 tbsp of soy sauce (Amazon Link - geni.us/light-soy-sauce)
    1.5 tbsp of oyster sauce (Amazon Link - geni.us/premium-oyster-sauce)
    1.5 tbsp of dark soy sauce (Amazon Link - geni.us/dark-soy-sauce)
    1/2 tsp of salt
    2 cups of rice, rinsed and drained
    1.5 cups of water (if using a regular rice cooker, use 2 cups of water instead.
    300 grams of mixed vegetables (I used carrot, peas, and corn)
    1 big tomato
    100 grams of diced ham
    100 grams of sausage slices
    150 grams of beef (Marinade with 1/8 tsp of salt, 1/4 tsp of paprika, 1/4 tsp of garlic powder, black pepper to taste, and 1 tsp of dark soy sauce.)
    INSTRUCTIONS
    Press the saute button on the instant pot, then add oil, minced garlic, ginger, and shallot. Stir for a few minutes or until fragrant. For the rice cooker, please choose a similar setting that allows you to saute the aromatics.
    Add soy sauce, oyster sauce, and dark soy sauce. Keep stirring until the sauce is bubbling.
    Add the rinsed and drained rice, 1.5 cups of water, and 1/2 tsp of salt, then mix well. The Instant Pot seals well, so you don’t need that much water, but if you are using a rice cooker or cooking this in a stock pot over the stove, please use 2 cups of water.
    Cut a cross on the tomato and put it in the middle of the instant pot. Put your favorite vegetables and protein around the tomato. I used carrots, peas, golden corns, sausage, diced ham, and marinaded beef.
    Close the instant pot lid. Put the valve in the sealing position. Press the rice button, and the rest is just waiting. If you are cooking this dish in a stock pot over the stove. You have to turn the heat to high and bring the pot to a simmer, then turn the heat to low and let it cook for 20 minutes.
    Remove the tomato skin and mix everything thoroughly.

    I made this today with a regular pot, used home grown tomatoes, eggplant, carrots and baby bok choy. Added some bacon instead of the other meat I didn’t have. Came out wonderful! Especially great with sesame oil on top in the end. Thank you so much! This will be a regular thing in my house now.

    I do similar dishes to this. My family comes from the rice region in Spain and for the starter we usually make a sofrito (onion, garlic peppers, sometimes wine) instead but the basis is very similar. I really recomend using round grain rice, specially bomba variety 8or even Calasparra rice) because it really soaks the flavor of whatever you cook with it. Most people here would add paprika and /or saffron wich are the typical rice spices in Spain, but when I do it for myself I usually just add herbs and maybe some chile flakes. Or ñoras (a smoked dried pepper).

    I made this a few weeks ago and it was delicious! I used corn, button mushrooms, store-bought Chinese dried sausage, chicken, and edamame. Finished it off with a little sesame and chili oil.

      Pressure cookers always look pretty neat when other people use them but in my experiences so far they take a lot of trial and error to learn how to make the most of. I'm not saying that they are bad, just be aware that getting the hang of them can be trickier than you might first think. I suspect that they make the most sense for people who have high energy costs. If so that is a good reason to learn them.

      @Lisa ... Instant Pot is a great investment. We bought one few years back, then we bought two more. Because you can cook in one, while you prep for next cook in other.

    There is a very similar indian dish called Bisi Bele Hulianna (or Bisi Bele Bath - aka hot lentil and rice), which is the traditional indian version of this dish. Its also delicious and super easy! The main differences seem to be the specific spices used in the mix, and of course the addition of lentils.

      Without the beef or homemade sausage it's just "Wash rice, put everything in a pot, turn on". Lazier than this isn't cooking...it's toast, or reheating something in the microwave.

    I’ve been making this for a long time. I had no idea it was an actual recipe. I do add a little less water to make up for the fact that a tomato has a lot of water.

    This looks like a great idea. However, I wouldn't want to mess with the tomato skin. I'd be inclined to used canned stewed tomatoes or something similar. In the past I've had trouble finding dark soy sauce locally, so I usually substitute regular soy sauce with some added molasses. But whatever changes I'd be inclined to make, this looks like a versatile enough recipe that I could get away with it. Like a stir fry that's ultimately more stir than fry.

    Im Mexican and I find this recipe similar to Red Mexican Rice recipe, we first fry the clean and washed rice til is dry and just a little golden, add some broth whit blended tomatoes , then add some vegetables and finally let the exces of water get consumed covering the pot whit the lid, the result, a savory delicious and fluffy rice whit vegetables to eat whit another dish.
