Keep in mind: Duncan Idaho, one of the best fighters that House Atreides even has, said that fighting a single Fremen was the closest he ever came to dying. Jamis is supposed to be a pretty prestigious Fremen warrior. Paul absolutely cooking him just speaks levels about how well trained the kid is.
Not only that, but he trains with shields mostly. This is also probably why he was able to counter so well, a lunging fast stab would be useless against a shield. You would have to control the fight to slip the blade past it slowly. Its a completely different fighting mindset. Without shields, it takes one well placed blow to end the fight. Hence the aggressive and quick nature of the fremen's fighting style.
Also Duncan Idaho was a fully trained swordsman by the legendary Sword Masters of Ginaz, who had used swords to take out fighting robots during the Machine Crusade. Paul was Duncan's primary student, not to mention Paul's training under Gurney Haleck who was also a renowned fighter (and as rumor has it, an awesome musician). Then of course there was his training in the Weirding Way, the martial arts developed by the Bene Geserit sisterhood. Paul was raised from very young in expert combat.
3:26, The fact that Paul is so well-trained by Gurney that he could have ended this fight at various points but just wasn’t ready to kill a person yet was such a good bit of characterization.
It’s literally a smaller scale version of what Paul is doing fighting his future, trying to avoid it but having no choice but to go through it even with all the harm it causes.
The parallel between Paul's first on screen kill and Feyd's on screen kills is insane

Memes aside, it's not even that Jamis is trash, he's one of the best Fremen fighters Stilgar knows, it's just Paul, even before becoming what he's prophesized, is stupidly overpowered.

damn i didnt even realize it, yeah, paul was like a matador fuckin with a bull. just dodging and weaving and trying to find a way to let this dude down easy, and when he was told "nah you gotta kill him" he did, and it wasn't close.
the REALLY wack thing, is that the dude KNEW he was cooked, and so he did a move that would absolutely kill him, but would also kill paul. The knife-behind-the-back trick. That exposes you to the enemies blade and makes you an easy kill, but if the opponent takes that easy out then he'll die too since your knife still finds its mark. Paul then styles on this guy, DODGING THE DEATH STRIKE ENTIRELY and stabs him in the back, and it's over.
fuck this really is a good fight. I hope we get more in dune 3.

There is some explanation in the scene though. When they frost meet Paul and his mother, Stilgar says Paul can stay but the mother is weak and can't be trained so she needs to die. But Paul's mother is a lot more dangerous than she seems and manages to put a knife om Stilgars neck which shows she is worthy. But the problem is once she did that she bested him and Stilgars the leader, this didn't sit well with Jamis and he wanted to challenge Jessica (the mother) and asked who is her champion. And of course Paul said he was. We need to understand is that for us holding Jessica holding a knife on Stilgar was a sign she was powerful but for fremen and especially for Jamis it was a sign of the weakness of Stilgar. The problem though this was a not a proper fight so I don't know if the rules actually apply here but also Stilgar was too quick to make a judgement of Jessica's worth.

They say it in the second part straight, the Fremen have been fighting the Harkonnens for a few decades, the Atreides have been fighting for centuries. Paul's been prepping for fights like this all his life, except he was training for someone with actual weapons and a shield. In the books it's even more ludicrous, the Fremen think he's mocking them by fighting to get past a shield that isn't even there.

The reason Jamis challenged Paul instead of becoming his friend is that when The Fremen attacked Paul and Jessica, Jamis got ktfo by Paul in the confusion. That's why he challenged Paul, because if he let Paul go, he'd lose his place as 2nd best fighter in the band.
