Making a Super Sharp Chef Knife

  • In this video, I make a stainless steel chef knife using AEB-L, christmas burl scales, and resin. I share the processes and steps taken to go from rough materials to a polished, functional tool.

    Jacob will have this knife for years and years. My dad had his dads knife forever. He would sharpen it all the time. The blade eventually became very narrow so he stopped using but since it was his dads he always kept it.

    blows my mind how so many knife makers (and chefs also) dont know how to sharpen. but knife makers especially. like making a knife is so much more difficult than learning how to sharpen.

      Not yet no, I've since upgraded though so maybe now I'll take it a part and show what I started with. Really just cut the guards to make room for the belts and added a tabletop and flat platten.

    Awesome knife ! I'd suggest a few things to get a better heat treat :
    - use condursal instead of stainless foil, it'll prevent oxydation and let you see the color of the blade
    - you can buy a type K probe and a device to read temperature, close one end of the tube in the forge, and drill through a fire brick and the closed end of the tube. You'll be able to insert the probe, and from there you can play with the amount of gaz and air to get a steady temperature. Not as precise as getting a heat treat oven but definitely better than judging by eyes !

      Thanks Lampro! I'll have to check out condursal. That foil stuff is expensive. I do use a high temp pyrometer to read the temps but a temperature reader may be easier. I figure at that point though might as well get an oven haha.

      I'm planning on having a set up on the new gas forge, less pricey than a oven ! A step forward in better knives 😁

    You need a vacuum chamber and a vacuum pump. I just recently coughed up the money for cactus juice but I still use alcohol inks and iso and my vacuum chamber to pull the dye into the pores. Then stabilize with cactus juice.

      So those scales were already stabilized. Do you think running it again with cactus juice would help fill the remaining voids? I'd love to get into dying and stabilizing my own stuff for sure.

      @@99echo some wood is just punky like that. If it was already stabilized you wouldn't get any resin in the pours because it's been cured. Starbond is the way to go to fill voids

      I've heard about that but never tried it. Perhaps I should've made a "casting" in my vacuum chamber.

    You should really try to get AEB-L to 63-65HRC, because you will have a much nicer Edge Stability (with Cryo treatment) and also a longer edge retention. But you will most likely need a kiln for that, so maybe that is a thing you could do for the future!
    Otherwise a great build with a small shop, no excuses! :)

      Thank you! Yeah not ready to drop a couple grand on a kiln and cryo setup just yet haha. Definitely not a professional setup but relatively accessible for hobbyists like myself. Plus, 58-59 HRC (what I think this knife is at) is still considered a high performance kitchen knife. If/when things get serious, a HT oven will be on the list haha

    Loving the video, its great to see the different stuff you try each video, as a fellow knife maker, I relate :). If you want the epoxy to go deeper you can use less colour pigment (you’d be surprised how little you need) or use a less viscous epoxy. With A-EBL, I think you can up the hardness by 1hrc by just putting it in a cold freezer. Obvs is doesn’t compare to a proper cryo, but apparently it helps. Keep up the good work

      I didn't think of using less pigment! That might've helped, thank you! I've read about the freezer thing from Larrin Thomas but had forgotten about it. I'll give it a go next time. I appreciate the comment 👍

    I've looked online and a lot of people use home freezer for the cry with good results :) not as good as liquid nitrogen ,but still very nice.

    I have a very noobish question. What is the purpose of the liner that goes between the handle scale and the tang?

      For me it's looks but supposedly it helps with deterioration by having a more resilient material layered between the wood and steel.
