I worked at one of the biggest poultry companies in the country, de-boning the chickens and we had to wear metal gloves and plastic arm guards because the knives were so insanely sharp. Watching this guy in action without any protection is impressive.

Sharpen the knives and then keep the sharp with a honing steel as a beginning. Also the work to keep the sharp with a 1000/6000 grit whet stone is less than you would think

Nah the meats just frozen those knifes dull quick cutting some much fat and nicking bones but butchers freeze everything before they work on it so it's less messy and the meat is really stiff and cuts easy af

Great knife skills in use and sharpening. One thing I never see ppl talk about, this is a brutally physical job especially if your busy and have to stay working. Tossing around dead weight holding bending toss again and repeat. Great respectable work.

Awe man this is taking me way back to when I was a freshman learning dentistry in college I was so broke that I actually had to do just what that man is doing every day for well over 5 years from 4:am to 7:am then at 9:am I had to be at med school I was going to college in Paris back then and the butchery was located in a city called Rungis so if you're familiar with Paris you know it's long train ride thus many times I didn't even have time to take off my uniform so I'd arrive to my school with my shirt stained with blood people would look at me suspicious in the metro tho like wtf?🙏🏽😂 Those were the old days I made it tho but it wasn't easy that's why I keep my butchering license right under my dentistry diploma at my practice all my patients think it's a prank they don't know it's real some have even nicknamed me the butcher😂but they always come back so maybe I'm not that bad of a dentist after all😉👌🏾

And you are correct that the bonesaw is dangerous and the worst part is having a change that blade. The Greek man had two of the tips of his fingers gone.

The knife doesn't need to be super sharp for this butcher. He just know basic animal anatomy. He knows exactly where and what part of the lamb he needs to slice his knife through to make a buttry- like cuts. He can dismember a human body in seconds. That's the scary part!
