I have an insanely good chocolate cake recipe which has been my go-to for a long time now. However, it doesn't have brown sugar and it doesn't have sour cream (it's got buttermilk and coffee), and I'm always on the hunt for even better recipes. So I may have to give this a go!
From one diehard fan of BR mint chip ice cream to another, I’m curious to know if you have noticed that the formulation changed a few years ago? It doesn’t taste quite as minty as it used to. Really bums me out because this is my #1 favorite flavor. (Note: I will still be making this ice cream cake).
Mint chip is my absolute favorite, hands down! I am a huge ice cream snob. My local dairy has a great ice cream line. The mint chip recipe doesn’t have any dyes or weird preservatives. SoCo is the company and it has to be my number one. Häagen-Dazs ranks high as well! Hi! My name is Lisa and I am a an Ice Cream-aholic! At least I can acknowledge my addiction. Symptoms of the disease may be sugar high, intense nostalgia and happiness… enough said, lol! My mom would store her brown sugar by putting the open bag in a plastic baggie with a damp cotton ball between the two. I thought it was a brilliant idea and maybe people find it helpful. Even though I was taught baking using imperial measurements but now I only use metric! It’s precise and cuts down on dirty dishes because you don’t need measuring cups and/or spoons
@alisonroman but why not use the salty vanilla frosting on top of the ice cream cake? I know, I know, whipped cream is "sweet enough" but I suspect that you must have a more nuanced answer to this question and I desire to know it.

I made this cake last night and may or may not have been a litttttle intoxicated as I did so... With that in mind, I screwed up so many steps (didn't read ahead because, drunk. whoops), I baked it in a 13 x 9 glass dish not a sheet pan, and didn't have buttermilk or sour cream so I used a lot of plain greek yogurt to substitute. That said the cake still turned out amazing!! It was easy to make in an inebriated state and with goofy substitutions (though I stand by the plain Greek yogurt if you're missing buttermilk OR sourcream maybe not both), so I have no doubt if you actually read the recipe beforehand and actually follow the instructions you will have a fabulous dessert on your hands. Note to self, make cake first, drink wine second (or don't. amiright?!)

This looks so fab ! can I sub sour Cream for the buttermilk ? Whilst Buttermilk is available in the UK I wouldn't know where to get it but you can get Sour cream in all the shops.
The recipe calls for sour cream. But I think you need some more liquid for the cake. I’m in Japan and there is no buttermilk here either. Can you get drinkable yogurt?? We have lots of unsweetened drinkable yogurts here in Japan which I substitute for buttermilk which is a fermented milk drink as well. If you cannot easily get a drinkable liquid type yogurt just add a little bit of milk to regular yogurt and that should do fine. What you want is something that is a little sour to react with the powder and baking soda.
@@Pammellam when I don't have buttermilk on hand I substitute milk (I usually use 2% but you could use whole milk) and add a few tablespoons of lemon juice to the milk. Wait a few minutes for the milk to curdle, then add to your cake. However much buttermilk is called for, use that amount of milk. I have done this for years and it always works.
I grew up in Tarzana and my mom would take us for a five cent square scoop cone whenever we visited my aunt in Sherman Oaks. She got a pistachio scoop. I always ❤ mint chocolate chip. I miss 5 cent scoops and Abba Zabba bars, but since we moved to Portland, some stores carry them. If not at Thrifty and at BR, I always get cherries jubilee-or peppermint at Christmas. As for chocolate baking, I always prefer cocoa. My family is fine with that even though they are chocolate snobs, so I can’t wait to try your sheet pan cake. If I do, I can cut 6” rounds rather than prepping 3 cake pans. Yay! You do sacrifice some flavor without butter, but if you make a good frosting, nobody will care.
