this came at the perfect time for me. i’ve been quickly realizing (hot take) that krystal is my perfect burger and this incorporates all the elements that make it my fav. plus i have about a million potato buns leftover from a bbq this weekend. WINNER WINNER BURGER DINNER

I love iceberg lettuce. The middle crispy leaves are the best on a burger. Not floppy like the outer leaves and not as bitter as the inner leaves. But I'm a mayo, lettuce, tomato girl with kosher pickles on the side.
I'm in your corner start to finish on this topic, including all the variations and the Peroni. My only addition is to suggest Feltman's (yeah, Feltman's of Coney Island) mustard. French's is classic and perfectly good, but Feltman's is apple cider based and adds a whole new layer of mustardy goodness. Oh, and small All-Clad lids make really good, unbendable, smashers.
Use a flat griddle without high sides, so you don’t burn yourself and you can get a thinner smash. Don’t smash on the second side, it squeezes the juices out. Use a sturdy instrument that is top down strong to smash with, like a potato masher, you can cover it with tin foil to cover slates. Flame doesn’t have to be so high, just as long as pan is steadily hot to very hot. The longer pan is on flame the hotter it will be.
Will have to do the combo onion style next time. I sort of split the difference by putting raw onions on the underside of the burger on the flip. That doesn't get the other side as browned, but it hasn't bothered me. I actually ran out of American Cheese last burger and basic sharp cheddar does not work. On occasion, I like a little bit of heat just for fun, so I create a chunky relish with the pickles and jalapenos.
Idk if it’s the technique or onion but these burgers are amazing ti make tastes like any restaurant burger I’ve made it 2 times I’m going to forever make my burgers this way 4ever 💯💯‼️thanks fir the recipe

I launched a food truck this spring and smash burgers are always on my menu. Locally sourced grass fed beef, Martins sesame seed potato roll (yes fuck their political crap, they are still the best), shredduce, dill pickles, Mayo, on the bottom salt and pepper on one side, flip American.
OK Alison, I see us gon' have some disagreements we have to work at, here. I believe mayo DOES belong on the burger, but ONLY on the top where it can dress the lettuce and tomato the way any civilized salad dressing oughta do. Dill pickle chips? oh HELLS yeah. Load 'em on. I'm TOTALLY on board with you putting mustard on the bottom bun half to season the meat 'cos mustard is a spice for seasoning meats. I don't got any quarrel with you putting on sliced raw yellow onion (though IMO red is fine, too). However, I do feel yer being too restrictive when it comes to cheese. Kraft American singles is just fine and I'll happily eat them, but I think New York sharp cheddar is also a viable choice.

Alison, your plants look awesome! (I’ve taken to putting iceberg and potato chips in my (mustard foreword + spicy) eggy salad sandwich . Very delish with more chips on the side. I’m with you on the American cheese, though a nice melty cheddar and some pickled pink onions on top is a good thing. (Then my coleslaw on a separate little plate ,, I’ll use the last of the bread to wipe up the slaw ‘juice’.. a delicious bite. :))

It occurs to me that the makers of MARTIN'S potato rolls -- which really are the best in the world -- might not want their incomparable product to come into contact with the unappetizing bilge heated up by this vulgarian.
I usually agree with her on everything. That's why this mess is so disappointing. We get it, you like sour and bitter things. You don't have to put them on the burger, on the side, and in the potato chips. I go with Louis's Lunch...the original.

As long as the burger isn’t from a tube of pre-portioned frozen patties and doesn’t have the texture of a hockey puck, IDGAF. Thick medium rare backyard burger with juicy in season tomato, crispy smash burger with pickles and onion, they’re all good. I like pickles, mayo and stone ground mustard or dijon, not French’s, the wonder bread of the mustard world, but you do you!
Yum... I use a piece of parchment paper between the patty and the spatula. I can get my other hand in there to press if need be and pulls away clean and easily from the patty. I will smash with the onion next time. 👍

Your opinions are fascinating….and humorous! Love the potato buns, but I’d rather eat dirt than American cheese - has to be good quality sharp cheddar. And NO MUSTARD! Save it for hot dogs. I like ketchup on my burgers like most Americans. And lettuce (leaves, NOT shredded & a thick slice of salted tomato and mayo on that side, ketchup on the other. Bacon is good too. See, I can be just as opinionated as you! How about that?

I second this! Way too many people trying build a blt on their burger, which is fine, but that’s not a burger.

I butter my buns and will die on that hill. (I loathe yellow mustard). And I use Grillo HOT kosher dill pickles.

A separate cast iron skillet should be used for vegetarian/vegan cooking. Bits of food/seasoning sticks forever to it.
