    My Dad used to make this. But he didn’t use lemon juice and cooking. He used milk that went totally sour, drained it overnight and seasoned with salt. Much better than the cottage cheese bought in store!

      Interesting, though I'm not surprised there is more than one way to make this. We make many of our favorite foods at home, and the result is usually much, much better than anything store-bought.

      Sonia Joubert - why didn’t it make you sick if it was totally sour? Wouldn’t it be rotten? I’m totally being serious cause from now on, when my milk starts curdling, instead of dumping it, I’ll make cottage cheese.

      @@awesomekoga7848 The bad Bactria were killed during Pasteurizing. The new Bactria are furmentions of Prbiotics the flora (GOOD Germs) your gut needs. They can be found in yogurt and other fermented foods.

    In India it's a common household item to either prepare tasty dishes or just have it with salt or sugar. In Bengali we call it chhaana and various kinds of sweets and also dishes to have with rice, chapati etc are made from it.

    I think the difference between cottage cheese & farmers cheese is the amount of straining/drying...
    My Polish Grandmother (Busia) would tie the cheese clothe and hang it over the bowl over night ...
    Making it a drier consistency

    I do this but put the lemon in at the end once the milk is starting to boil. The method here looks simpler and less likely to boil over. I also tightly compress the cheese cloth and clip with a clothespin. I'll mix in some salt and herbs or spices before securing the cheesecloth. Once it rests, refrigerate. It makes a close resemblance to paneer cheese. This type of cheese won't melt when put into hot food, so it's really good for Indian dishes.

      No! You have to boil the milk first, then slowly pour in the vinagar /or/lemon juice. Stir gently and the curds should form fast.

    Wow this looks pretty much identical to this cheese we made at this cheese making workshop I attended a few years ago. They were calling it “Farmers cheese” tho. Is this just another name for the same cheese???

But either way, many of the steps are the same for either video. Some variations of the cheese recipe are known in some parts of the world as "farmer or farmer's cheese", while other areas may call is "paneer".

      We get generic brand whole milk at our local supermarket. I think is pasteurized, might even have vitamin D added. But just regular milk, nothing fancy.

      I use UHT milk often. It works fine. Not perfect, but often times, good enough. I've even used 'low-fat' UHT. I got milder tasting cheese, but it still worked.

      It can last sometimes for 10 days , but trust me you will know when it goes bad it will taste like shit and you will spit it right away .

      actually its mostly lactose (the shitt that makes you fart and shit yourself) with only around 10% protein content... while most of the protein stays in the cheese

      Ricotta out of the whey, also. Basically the same process:
      Heat (to 165-180 F),
      Add acid (lemon or white vinegar) & salt
      Rest 30-60 min.
      Strain gently.

      When you place the curds in a bowl with a bit of whey (do not stir or fold in) you have cottage cheese.
      When you force the whey to curdle, you end up with ricotta (means cooked twiced)...
      However, many people throw away the whey, don't. It is super rich in good stuff. In other words,
      do you want to spend big bucks for vitamines or suppliments, or get free whey after making cheese? I evaporate the whey then pulverize it, then use it as a powder in my shakes and smoothies... Enjoy Ambar...

      HAZE G, you bring the milk to boil and then mix in the yogurt, if you use yogurt then at least you don’t need to rinse anymore.

      Depends how much you want, and also depends on water quantity in milk
      On average half litre per person.
      And first boil milk then pour half to one lemon

      Boil milk first
      And half lemon will do the work within few seconds, just keep boiled milk on low flame while mixing lemon. Only put more lemon if required.

    Looking at the video I'm not sure what makes one thing a cottage cheese and another a different type of cheese, because they all seem to be made the same way. Milk + acid yet they get different names. Great video though, really easy to make my first cheese. Milk + acid + heat!

      It has to be milk from an animal, cow or goat milk is best. Cant use almond milk or soy. And you can use vinagar instead of lemon juice its cheaper.
